Chicken Chasseur, or French Hunter’s Chicken, is a rustic and comforting dish featuring bone-in chicken simmered in a rich tomato, mushroom, and herb sauce. It's a classic French meal perfect for cozy dinners.

  • Total Time: 1 hour
  • Yield: 4 servings

Ingredients

    • For the Chicken:
    • 4 chicken thighs, bone-in, skin on (~8 oz each)
    • 4 chicken drumsticks
    • ¾ tsp kosher salt
    • ½ tsp black pepper
    • 3 tbsp all-purpose flour
    • 2 tbsp vegetable oil
    • 2 tbsp unsalted butter

    • For the Sauce Chasseur:
    • 14 oz (400 g) white mushrooms, sliced
    • 2 onions, halved and thinly sliced
    • 3 garlic cloves, minced
    • ½ cup unsalted chicken broth
    • 3 tbsp tomato paste
    • 2 ½ cups low-sodium beef broth
    • ¾ tsp kosher salt
    • ¼ tsp black pepper
    • 2 tbsp unsalted butter, cold and cubed
    • 1 tbsp fresh tarragon (or parsley), finely chopped

  • For Serving (optional):
  • Creamy mashed potatoes, rice, or small pasta

Instructions

  1. Prepare the Chicken: Pat chicken dry. Season with salt and pepper, then lightly coat in flour. Shake off excess.
  2. Brown the Chicken: Heat oil and 2 tbsp butter in a skillet over medium-high heat. Brown thighs skin-side down for 5 minutes, flip and cook 1 minute. Remove. Repeat with drumsticks, browning on 3 sides (~2 mins per side). Set aside.
  3. Sauté Vegetables: In the same pan, add mushrooms and onions. Cook for 5 minutes over high heat until browned. Add garlic and cook for 30 seconds.
  4. Deglaze and Build Sauce: Pour in chicken broth and scrape the fond. Stir in tomato paste and cook 1 minute. Add beef broth, salt, and pepper. Mix well.
  5. Simmer Chicken: Nestle browned chicken back into sauce, skin-side up. Simmer covered for 10 minutes. Remove lid and simmer uncovered for 20 minutes to reduce.
  6. Finish Sauce: Remove chicken. Simmer sauce for 3 minutes to reduce further. Off heat, stir in cold butter cubes until melted and glossy.
  7. Serve: Return chicken to sauce. Spoon sauce over top, garnish with chopped tarragon. Serve with mashed potatoes, rice, or pasta.

Notes

  • For a more traditional Chasseur, you can add a splash of white wine during the deglazing step.
  • Use a mix of mushrooms (e.g. cremini, oyster) for more depth of flavor.
  • Leftovers store well in the fridge for 2–3 days and reheat beautifully.
