Ingredients
Filling
- 3 cups shredded cooked chicken (or shredded beef)
- 1 cup shredded Mexican blend cheese
- ½ cup salsa (store-bought or homemade)
- 1 (4-ounce) can diced chiles
- Garlic salt with parsley flakes, to taste
- Pepper, to taste
Tortillas
- 12 (6-inch) flour tortillas (or corn tortillas)
For Frying and Seasoning
- Vegetable or canola oil (for frying)
- Salt, to taste
Toppings
- Shredded lettuce
- Chopped tomatoes
- Green salsa
- Guacamole
- Cilantro Ranch dressing
Instructions
- Preheat the oven: Set your oven to the warm setting, approximately 200°F, to keep the flautas warm after frying.
- Heat the oil: Fill a large saucepan with about ¾ inch of vegetable or canola oil and heat it over medium heat until it reaches 375°F, ensuring it's ready for frying the flautas to a crisp golden brown.
- Prepare the filling: In a medium bowl, thoroughly combine the shredded chicken, shredded Mexican blend cheese, salsa, diced chiles, garlic salt, and pepper until evenly mixed.
- Assemble the flautas: Working with four tortillas at a time, place a heaping spoonful of the chicken filling along the middle of each tortilla. Roll each tortilla tightly around the filling and secure it with a toothpick to keep it intact during frying.
- Fry the flautas: Using tongs, hold each rolled tortilla in the hot oil briefly until it firms up, then release it to cook fully. Fry each flauta until it turns golden brown, about 2 minutes. Transfer them to a paper towel-lined plate to drain excess oil and immediately season with salt.
- Keep warm and serve: Place the fried flautas on a foil-lined baking sheet and keep warm in the preheated oven while frying the remaining tortillas. Serve the flautas warm with shredded lettuce, chopped tomatoes, green salsa, guacamole, and Cilantro Ranch dressing for dipping.
Notes
- Use flour or corn tortillas based on your preference or dietary needs.
- To save time, use pre-cooked rotisserie chicken shredded for the filling.
- Keep an eye on the oil temperature to prevent burning or undercooking the flautas.
- Remove the toothpicks before eating for safety.
- These can be served as appetizers or a main dish with fresh toppings and dips.
- Leftover flautas can be reheated in the oven to maintain crispness.
