Ingredients
Filling
- 2 cups rotisserie chicken, shredded
- 1 cup shredded Mexican blend cheese
- 1 (8 ounce) block cream cheese, softened
- ¾ cup chunky salsa
- ¼ cup sour cream
- 1 teaspoon garlic powder
- ½ teaspoon chili powder
Tortillas & Oil
- 12 (8-inch) flour tortillas
- 2 cups canola oil (or enough to fill half your skillet)
Serving Options
- Guacamole
- Salsa
- Sour cream
- Cilantro
- Lime wedges
- Taco sauce
- Diced tomatoes
Instructions
- Prepare your plate: Line a plate with paper towels to drain the taquitos after frying and set aside.
- Pre-heat your skillet: Pour the canola oil into a large, heavy-bottomed skillet and warm it over medium heat until it reaches frying temperature.
- Make your filling: In a large bowl, combine the shredded rotisserie chicken, shredded Mexican blend cheese, softened cream cheese, chunky salsa, sour cream, garlic powder, and chili powder. Stir thoroughly until all ingredients are evenly mixed.
- Heat your tortillas: Place the flour tortillas between damp paper towels and microwave them for 20 to 30 seconds to make them pliable for rolling.
- Fill them up: Spoon 2 to 3 tablespoons of the chicken mixture along the center of each warmed tortilla. Roll each tortilla up tightly around the filling.
- Secure the tortillas: Insert a toothpick through each rolled tortilla to keep it closed during frying.
- Fry them: Carefully place the taquitos seam-side down into the hot oil. Fry each taquito for 2 to 3 minutes per side or until golden brown and crispy.
- Serve: Remove the taquitos from the oil, drain on the paper towel-lined plate, remove toothpicks, and serve warm with sour cream, salsa, and your preferred toppings like guacamole or lime wedges.
Notes
- Make sure the oil is hot but not smoking before frying to achieve a crispy texture.
- To make them spicier, add a pinch of cayenne pepper or hot sauce to the filling mix.
- You can substitute flour tortillas with corn tortillas if preferred, but flour tortillas hold the filling better when frying.
- For easier rolling, warm the tortillas just before assembling to prevent cracking.
- Drain the taquitos well on paper towels to remove excess oil and keep them crisp.
- Leftover taquitos can be reheated in an oven at 375°F for 10 minutes to maintain crispiness.
