Ingredients
Marinade
- 280 g low-fat natural yogurt
- 2 tbsp tandoori spice blend powder
- 1 tbsp minced ginger and garlic paste
- 1 tbsp lemon juice
- Salt and freshly ground black pepper, to taste
Main Ingredients
- 600 g chicken breasts, cubed
- 8 wholemeal wraps
- Iceberg lettuce, shredded
- 1 small red onion, sliced
- Small piece of cucumber, diced
To Serve
- No-fat Greek yogurt
Instructions
- Prepare the marinade: In a large bowl, combine the low-fat natural yogurt, tandoori spice blend powder, minced ginger and garlic paste, and lemon juice. Mix well and season with salt and freshly ground black pepper to taste.
- Marinate the chicken: Add the cubed chicken breasts to the marinade and mix thoroughly to coat evenly. Cover the bowl and refrigerate for at least 4 hours, or ideally overnight, to allow the flavors to develop.
- Preheat the grill: Set your grill to high heat and line a grill pan with aluminium foil to catch drippings and simplify cleanup.
- Grill the chicken: Thread the marinated chicken pieces onto 4 skewers. Place the skewers on the foil-lined grill pan and cook under the grill for about 30 minutes, turning frequently. Cook until the chicken is fully cooked and has a slight char for that smoky flavor.
- Warm the wraps: While the chicken is grilling, warm the wholemeal wraps either in the same oven briefly after grilling or in the microwave until soft and pliable.
- Assemble the wraps: Lay the warmed wraps flat and layer with shredded iceberg lettuce, sliced red onion, diced cucumber, and the grilled chicken tikka pieces.
- Serve: Serve the assembled wraps immediately with a dollop of no-fat Greek yogurt on the side for a refreshing contrast to the spicy chicken.
Notes
- Marinating the chicken overnight enhances the flavor and tenderness significantly.
- Using wholemeal wraps adds extra fiber and nutrients compared to white flour tortillas.
- The tandoori spice blend can be adjusted based on spice preference; mild versions are available for less heat.
- For an indoor cooking alternative, the chicken can also be cooked on a stovetop grill pan.
- Leftover chicken can be stored in an airtight container in the fridge for up to 2 days and used in salads or sandwiches.
