Ingredients
Pasta
- 1 pack Cheese tortellini
Chicken & Seasoning
- 1 large chicken breast, sliced in half
- ½ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon pepper
Sauce
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 cups heavy cream
- 1 teaspoon Italian seasoning
- ½ cup shredded Asiago cheese
- ¼ cup Parmesan cheese
- 1 cup spinach
Instructions
- Cook Tortellini: Bring a pot of salted water to a boil and cook the cheese tortellini according to the package directions until al dente. Drain the pasta and set aside.
- Season Chicken: Pat the chicken breast halves dry and season both sides thoroughly with salt, paprika, garlic powder, and pepper.
- Sear Chicken: Heat olive oil in a nonstick pan over medium-high heat. Add the seasoned chicken breasts and cook for 3-4 minutes per side until golden brown and fully cooked through. Remove from pan and set aside.
- Sauté Aromatics: Lower the heat to medium, then add butter to the same pan. Once melted, add diced onion and minced garlic, sautéing for 2-3 minutes until fragrant and translucent.
- Make Alfredo Sauce: Pour in heavy cream and stir in Italian seasoning. Let the sauce simmer gently for 1-2 minutes to thicken slightly, then add shredded Asiago and Parmesan cheeses. Stir continuously until the cheeses melt fully and the sauce is creamy.
- Add Spinach: Stir in the spinach and cook for about 1 minute until wilted into the sauce.
- Combine All Ingredients: Slice the cooked chicken into strips or bite-sized pieces and add it back to the skillet. Add the drained tortellini as well. Stir everything together gently to coat the pasta and chicken evenly with the Alfredo sauce.
- Serve: Serve the chicken tortellini Alfredo immediately while hot, optionally garnished with extra Parmesan cheese or crushed red pepper flakes for a little heat.
Notes
- For best results, use fresh or high-quality cheese tortellini for a creamy filling.
- Adjust seasoning to taste, especially salt and pepper.
- If the sauce becomes too thick, add a splash of milk or reserved pasta water to loosen it.
- Can substitute spinach with kale or arugula if preferred.
- Leftovers keep well refrigerated for 1-2 days but are best enjoyed fresh.
