Ingredients
Wet Ingredients
- 1 1/2 cups mashed bananas (about 2-3 medium bananas)
- 1/3 cup vegetable oil
- 1 egg (room temperature)
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 cup white granulated sugar
- 1 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
Add-ins
- 1 cup chocolate chips
Instructions
- Preheat: Preheat your oven to 350 degrees F (175 degrees C) to prepare for baking the muffins.
- Prepare Pan: Line a 12-count muffin pan with cupcake liners and set it aside for batter scooping.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, vegetable oil, and egg. Whisk the mixture until light and fluffy, then add the sugar and whisk again.
- Sift Dry Ingredients: In a separate large bowl, sift together the all-purpose flour, unsweetened cocoa powder, and baking powder to avoid lumps and ensure even mixing.
- Combine Mixtures: Add the dry ingredient mixture to the banana mixture. Gently fold the ingredients together with a spatula, being careful not to overmix to keep muffins tender.
- Activate Leavening: In a small bowl, mix the baking soda with the white vinegar. This will create a fizz that helps the muffins rise.
- Add Flavorings: Stir the vinegar and baking soda mixture along with the vanilla extract into the batter until just combined.
- Incorporate Chocolate Chips: Gently fold in the chocolate chips to distribute them evenly throughout the batter.
- Scoop Batter: Using a spoon or ice cream scoop, fill each lined muffin cup about two-thirds full with the batter.
- Optional Topping: Sprinkle a little sugar and a few extra chocolate chips on top of each muffin for added sweetness and texture.
- Bake: Place the muffin pan in the oven and bake for 20 to 25 minutes. Start checking at 15-20 minutes by inserting a toothpick into a muffin center; it should come out clean or with some melted chocolate but no raw batter.
- Serve: Once baked, allow the muffins to cool slightly, then serve warm or at room temperature. Enjoy these rich and flavorful Chocolate Banana Muffins!
Notes
- Use ripe bananas for the best natural sweetness and moisture.
- Do not overmix the batter to prevent tough muffins.
- Check muffins early to avoid overbaking; the presence of chocolate can make the toothpick test visually tricky.
- Can be stored in an airtight container at room temperature for up to 2 days or refrigerated up to one week.
- Freeze muffins for up to 3 months for longer storage.
