Ingredients
Base Ingredients
- 1/2 cup creamy almond butter
- 3 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1/2 cup almond flour
- 1 scoop chocolate protein powder
- 2 tablespoons unsweetened cocoa powder
- 1/8 teaspoon sea salt
Chocolate Coating
- 1/2 cup chocolate chips
- 1/2 teaspoon coconut oil
- Flaky sea salt, for sprinkling on top
Instructions
- Prepare Tray: Line a baking sheet or tray with parchment paper and set it aside for the prepared protein balls.
- Mix Wet Ingredients: In a large bowl, combine the creamy almond butter, honey, and vanilla extract. Stir thoroughly until the mixture is smooth and well blended.
- Add Dry Ingredients: Add the almond flour, chocolate protein powder, unsweetened cocoa powder, and sea salt to the wet mixture. Stir the ingredients together until evenly combined and a dough-like consistency forms.
- Shape Balls: Roll the mixture into small balls, each about 1 to 2 tablespoons in size. Place the balls on the prepared parchment-lined tray. Chill the balls in the freezer for 15 minutes or in the refrigerator for 30 minutes to set.
- Melt Chocolate: In a medium microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate mixture is fully melted and smooth.
- Dip in Chocolate: Dip each protein ball into the melted chocolate, using a spoon to pour extra chocolate over the top. Lift the ball out allowing the excess chocolate to drip off. To help the excess drip off, gently shake or tap the ball against the side of the bowl.
- Add Topping & Chill: Place the coated balls back onto the parchment-lined tray and sprinkle each with flaky sea salt to enhance flavor.
- Set Chocolate: Refrigerate the balls for at least 1 hour until the chocolate coating is fully set and firm.
- Storage: Store the finished brownie protein balls in an airtight container layered with parchment or wax paper in the refrigerator for up to 2 weeks, or freeze for up to 3 months for longer-term storage.
Notes
- You can substitute the almond butter with peanut butter or cashew butter if preferred.
- Use any chocolate protein powder for a similar effect; plant-based or whey-based protein powders both work well.
- Adjust the honey quantity for sweetness preference or substitute with maple syrup for a vegan option.
- Keep the balls refrigerated or frozen to maintain freshness and prevent melting of the chocolate coating.
- To ensure smoother chocolate melting, avoid overheating; stir frequently between microwave intervals.
- These protein balls are a great on-the-go snack offering a balance of protein, healthy fats, and some carbohydrates.
