Ingredients
Dry Ingredients
- 1 cup (145g) whole wheat flour
- ½ cup (55g) vanilla or chocolate protein powder
- ¼ cup (25g) cocoa powder
- 1 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
Wet Ingredients
- 2 large eggs
- 1 egg white (35g)
- ¾ cup (175g) plain Greek yogurt, 2%
- 3 Tbsp. (33g) unsalted butter, melted
- 3 Tbsp. (33g) erythritol or sweetener of choice
- 1 tsp. vanilla extract
Other
- 1 cup (170g) sweet cherries (fresh or frozen), pitted and chopped
Instructions
- Preheat Oven: Preheat your oven to 330°F (165°C). Line a muffin tray with 8 parchment or silicone liners to prevent sticking and ensure easy removal.
- Mix Dry Ingredients: In a medium bowl, combine the whole wheat flour, protein powder, cocoa powder, baking powder, baking soda, and salt. Whisk together to evenly distribute the leavening agents and cocoa.
- Mix Wet Ingredients: In a large bowl, whisk the eggs, egg white, Greek yogurt, melted butter, erythritol (or preferred sweetener), and vanilla extract until smooth and well combined.
- Combine Mixtures: Add the dry ingredients to the wet ingredients. Stir carefully just until everything is blended—avoid over mixing to keep muffins light and tender. Then gently fold in the chopped cherries to distribute them evenly.
- Fill Muffin Cups: Spoon the batter into the prepared muffin liners, filling each about ¾ full to allow room for rising during baking.
- Bake: Place the muffin tray in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin emerges clean.
- Cool and Serve: Once baked, remove the muffins from the oven and allow them to cool slightly before enjoying their rich, chocolatey flavor enhanced with bursts of fresh cherry.
Notes
- Do not over mix the batter, as this can make the muffins dense.
- Fresh or frozen cherries can be used; if using frozen, do not thaw to prevent excess moisture.
- If you want to make them dairy-free, substitute Greek yogurt and butter with plant-based alternatives, but baking time may slightly vary.
- These muffins can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- For added texture, sprinkle a few chocolate chips or chopped nuts on top before baking.
