Delicious chocolate coconut macaroons combining rich dark chocolate, sweetened condensed milk, and shredded coconut, baked to a perfect chewy texture with a hint of cocoa.

  • Total Time: 22 minutes
  • Yield: 30 servings

Ingredients

Chocolate Mixture

  • 4 ounces (113g) dark chocolate, chopped
  • 1 can (300mL, 10 oz) sweetened condensed milk
  • 2 large egg whites

Dry Ingredients

  • 4 cups (330g) unsweetened shredded coconut
  • 1/4 cup (25g) cocoa powder (Dutch process recommended)

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F (175 degrees C).
  2. Prepare Baking Sheets: Line 2 baking sheets with parchment paper or silicone baking mats and set them aside for later use.
  3. Melt Chocolate: In a microwave-safe bowl, heat the chopped dark chocolate at 50% power, stirring every 30 seconds until almost melted. Continue stirring off heat until completely smooth.
  4. Combine Wet Ingredients: Whisk the melted chocolate together with the sweetened condensed milk until fully incorporated.
  5. Add Egg Whites: Whisk in the 2 large egg whites thoroughly to blend the mixture.
  6. Mix Dry Ingredients: In a large bowl, stir together the shredded coconut and cocoa powder until evenly combined.
  7. Combine Mixtures: Add the chocolate mixture into the coconut and cocoa powder bowl, stirring until all ingredients are well combined into a sticky dough.
  8. Form Macaroons: Using a cookie scoop or tablespoons, form the mixture into 2-tablespoon sized balls, placing them on the prepared baking sheets. The mixture will be sticky, so a scoop helps maintain shape.
  9. Bake: Bake the macaroons in the preheated oven for 10-12 minutes until set but still moist inside.
  10. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  11. Storage: Store macaroons in an airtight container at room temperature for up to 5 days.

Notes

  • Use Dutch process cocoa powder for a richer chocolate flavor.
  • For easier shaping, chill the mixture slightly before scooping if too sticky.
  • Make sure not to overbake to keep macaroons chewy inside.
  • Store macaroons in an airtight container to maintain freshness and texture.
  • Can be frozen after baking for longer storage; thaw at room temperature before serving.
