Ingredients
Chocolate Base
- 6 ounces semisweet chocolate, finely chopped
- 6 tablespoons unsalted butter, cubed
Egg Mixture
- 4 large egg yolks
- ½ cup granulated sugar
- 2 teaspoons instant espresso powder
Whipped Cream
- 1 cup heavy cream
Optional Garnishes
- Sweetened whipped cream
- Chocolate shavings
- Fresh strawberries
Instructions
- Melt Chocolate: In a small heatproof bowl, combine the finely chopped semisweet chocolate and cubed unsalted butter. Place the bowl over a pot of barely simmering water (double boiler method) and stir constantly until the mixture is melted and smooth. Remove the bowl from heat but keep the pot of simmering water on the burner.
- Prepare Egg Mixture: In a medium heatproof bowl, whisk together the egg yolks, granulated sugar, and instant espresso powder until well combined. Place this bowl over the simmering water and whisk continuously for 5 to 10 minutes until the sugar dissolves and the mixture turns pale and slightly thickened. Remove from heat.
- Combine with Chocolate: Stir the melted chocolate mixture into the egg yolk mixture. Continue stirring for a few more minutes to allow the mixture to cool slightly. Set aside until the mixture reaches room temperature.
- Whip Cream: In a large bowl, whip the heavy cream to soft peaks. Gently whisk about ¼ of the whipped cream into the cooled chocolate mixture to lighten it. Then fold in the remaining whipped cream using a silicone spatula until fully incorporated, maintaining the airy texture.
- Chill Mousse: Spoon the mousse evenly into four 6-ounce ramekins. Refrigerate for about 1 hour or until the mousse is set and firm.
- Garnish and Serve: Before serving, optionally top the mousse with sweetened whipped cream, chocolate shavings, and fresh strawberries for an elegant finish.
Notes
- Use a gentle double boiler technique to avoid overheating the chocolate which can cause it to seize.
- Whisking the egg yolk mixture over simmering water ensures the sugar dissolves and the eggs cook gently, creating a silky texture without scrambling.
- Folding whipped cream carefully preserves the light, airy texture essential to mousse.
- This dessert can be made up to a day in advance and refrigerated.
- Ensure the mousse is chilled properly before serving for the best texture and flavor.
