Ingredients
Donut Dough
- 2 1/4 cups bread flour
- 1 large egg (room temperature)
- 1/2 cup + 2 tablespoons milk (warm)
- 3 tablespoons unsalted butter (room temperature)
- 5 tablespoons granulated sugar
- 1 teaspoon salt
- 1 envelope Instant Yeast (7 grams)
Chocolate Custard Filling
- 2 1/4 cups whole milk
- 2 teaspoons vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 3 egg yolks (room temperature)
- 1 whole egg (room temperature)
- 1/2 cup granulated sugar
- 2 1/2 tablespoons cornstarch
- 1/4 teaspoon salt
- 8 oz bittersweet or semisweet chocolate, chopped
- 2 tablespoons unsalted butter (softened)
- About 1 cup granulated sugar (for coating donuts)
Instructions
- Prepare Yeast Mixture: In a large bowl, whisk together the warm milk and room-temperature egg until combined, then add the instant yeast and whisk thoroughly until fully dissolved.
- Make Donut Dough: Add sugar, flour, and salt to the yeast mixture. Mix with a spatula until combined, then knead with your hands until all flour is incorporated.
- Add Butter: Incorporate the softened butter into the dough using your hands, kneading until the dough is smooth and elastic.
- Let Dough Rise: Place the sticky dough ball in a large lightly oiled bowl, cover with plastic wrap, and let it rise in a warm spot for a few hours until it doubles or triples in size. Transfer onto a floured surface and knead briefly for 2–3 minutes.
- Prepare Chocolate Custard: In a bowl, whisk sugar, egg yolks, whole egg, cornstarch, cocoa powder, and salt until thick and smooth.
- Heat Milk: Combine whole milk and vanilla extract in a medium saucepan and heat over medium-high until it just begins to boil, then remove from heat.
- Temper Egg Mixture: Slowly pour the hot milk into the egg mixture while whisking constantly to prevent curdling.
- Cook Custard: Transfer the combined mixture back to the saucepan over medium heat. Whisk continuously until it thickens, about 2–5 minutes.
- Add Chocolate and Butter: Lower heat to low, add chopped chocolate, and whisk until melted and smooth. Remove from heat and stir in softened butter until combined.
- Chill Custard: Transfer custard to a bowl and cover the surface directly with plastic wrap to prevent skin formation. Let cool to room temperature, then refrigerate for 2–4 hours until fully chilled.
- Shape Donuts: Punch down the risen dough and transfer to a lightly floured surface. Fold a few times and divide into eight equal portions. Shape each into a ball and place on parchment-lined baking sheet spaced apart. Cover with plastic wrap and let rest for 30–40 minutes.
- Deep Fry Donuts: Heat 1 1/2 to 2 inches of oil in a large deep pan to 350°F (175°C). Fry donuts in batches for 1–2 minutes per side until golden brown. Remove and drain on paper towels.
- Coat Donuts: Once donuts are completely cool, poke a hole in each using a long rounded object such as a chopstick. Roll donuts in granulated sugar until fully coated on both sides.
- Fill Donuts: Transfer the chilled chocolate custard to a piping bag fitted with a small tip. Fill each donut through the hole until a small dollop of custard appears on the surface. Serve fresh and enjoy!
Notes
- Ensure all eggs are room temperature to help the dough rise properly and prevent custard curdling when tempering.
- Use instant yeast for quicker and more reliable dough rising.
- Maintain oil temperature at 350°F for best frying results – avoid overcrowding the pan which cools the oil and makes donuts greasy.
- Chilling the custard thoroughly is key for firm filling that holds shape inside the donuts.
- Donuts are best enjoyed fresh but can be stored in an airtight container in the refrigerator for 1-2 days.
