These Chocolate Pecan Pie Bars are a delicious twist on the classic pecan pie, featuring a gluten-free almond and coconut flour crust, rich maple syrup-sweetened filling, and a delightful mix of pecans and dark chocolate chips. Perfect for satisfying your sweet tooth with a nutty, chocolaty treat that's baked to golden perfection.

  • Total Time: 55 minutes
  • Yield: 16 servings

Ingredients

Crust

  • 1 ¾ cups almond flour (blanched, super fine)
  • ¼ cup coconut flour
  • 3 tablespoons coconut sugar
  • 2 tablespoons coconut oil (melted)
  • 1 large egg (whisked)
  • 2 tablespoons pure maple syrup
  • ⅛ teaspoon salt

Filling

  • ½ cup pure maple syrup
  • 2 tablespoons coconut oil (melted)
  • ¼ cup coconut sugar
  • 3 large eggs (whisked)
  • 1 ½ teaspoons cinnamon
  • 1 ½ teaspoons vanilla
  • 3 tablespoons tapioca starch*
  • 1 ¾ cups pecans (coarsely chopped)
  • ½ cup mini chocolate chips (dark)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to get it ready for baking the bars.
  2. Make the Crust: In a medium bowl, whisk together almond flour, coconut flour, and 3 tablespoons of coconut sugar until blended. Add melted coconut oil, whisked egg, pure maple syrup, and salt. Mix thoroughly until the dough starts to stick together. Press this crust mixture firmly into the bottom and up the sides (about ½-1 inch) of a 9-inch square baking dish lined with parchment paper.
  3. Prepare the Filling: Using the same bowl, combine the remaining filling ingredients: pure maple syrup, melted coconut oil, coconut sugar, whisked eggs, cinnamon, vanilla, and tapioca starch. Whisk everything together until smooth and fully combined.
  4. Assemble the Bars: Sprinkle the chopped pecans and mini dark chocolate chips evenly over the pressed crust in the baking dish. Pour the filling mixture over the nuts and chocolate chips, spreading it out evenly.
  5. Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top of the bars starts to bubble and set.
  6. Cool and Serve: Remove the bars from the oven and allow them to cool completely to room temperature before cutting into squares. Serve and enjoy your delicious chocolate pecan pie bars!

Notes

  • Ensure your almond flour is finely ground for the best crust texture.
  • Tapioca starch helps bind the filling and create the perfect pie-like texture.
  • Allow the bars to cool completely to prevent them from falling apart when cutting.
  • You can substitute mini dark chocolate chips with regular-sized ones if preferred.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
