Ingredients
Chocolate Biscuits
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon table salt
- 3 tablespoons cold unsalted butter, cut into 3 pieces
- 1/2 cup cold heavy whipping cream
- 1/4 cup semisweet chocolate chips
Strawberry Topping
- 1 cup sliced strawberries
- 1 tablespoon granulated sugar
Additional
- Homemade Whipped Cream (recipe link or preparation method)
Instructions
- Preheat and Prepare: Preheat your oven to 400°F and line a baking sheet with parchment paper. If using an air fryer, lightly grease the air fryer basket; no need to preheat the air fryer.
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, unsweetened cocoa powder, 2 tablespoons of sugar, baking powder, and salt. Using a pastry blender, cut the cold butter into the mixture until the pieces resemble small pebbles.
- Add Cream and Chocolate Chips: Reserve 1 teaspoon of heavy cream. Add the remaining cream to the butter and flour mixture and stir with a fork until a dough forms. Fold in the semisweet chocolate chips evenly.
- Shape the Dough: Lightly knead the dough a few times in the bowl, then transfer to a lightly floured surface. Roll out the dough to about 1-inch thickness. Using a 3-inch round biscuit cutter, cut out two circles and place them on the prepared baking sheet. If you have scraps, reshape them into a smaller biscuit.
- Brush and Bake/Air Fry: Brush the biscuit tops with the reserved teaspoon of cream. In the oven, bake for 15-17 minutes until golden brown and edges are firm. If air frying, cook at 400°F for 10 minutes. Allow biscuits to cool completely before assembling.
- Macerate Strawberries: In a large bowl, mix the sliced strawberries with the remaining 1 tablespoon of sugar. Let sit for at least 30 minutes to allow the berries to soften and juices to form.
- Assemble and Serve: Slice each cooled biscuit horizontally in half. Top the bottom halves with the macerated strawberries and homemade whipped cream. Place the biscuit tops over and drizzle with strawberry juices. Serve immediately for best flavor and texture.
- Storage: Chocolate biscuits are best eaten the day they are made. However, you can store any leftover unassembled biscuits at room temperature for up to 2 days.
Notes
- You can substitute the homemade whipped cream with store-bought whipped cream if desired.
- For a dairy-free version, use vegan butter and coconut cream in place of butter and heavy cream.
- Use fresh, ripe strawberries for the best flavor and sweetness.
- If baking, ensure biscuits are cooled completely before assembling to prevent the whipped cream from melting.
- The biscuits can also be air fried as a quicker alternative to baking.
