This decadent double chocolate sweet potato bread is rich, fudgy, and flecked with dark chocolate and orange zest. Naturally vegan, it's made with wholesome sweet potatoes and is perfect for breakfast, dessert, or a snack.

  • Total Time: 1 hour 40 minutes
  • Yield: 1 loaf (about 8 slices)

Ingredients

  • Flax Egg:
  • 4 tablespoons ground flax
  • ½ cup water
  • Dry Ingredients:
  • 1¼ cups all-purpose flour
  • ¼ cup cocoa powder
  • 1¼ teaspoons baking soda
  • ¾ teaspoon fine salt
  • Zest from 1 orange
  • 3 oz dark chocolate bar, roughly chopped
  • Wet Ingredients:
  • 2 cups mashed sweet potato (about 3–4 medium potatoes, roasted and peeled)
  • 1 cup packed brown sugar
  • ½ cup olive oil
  • 1 tablespoon vanilla extract

Instructions

  1. Roast Sweet Potatoes (Ahead of Time): Preheat oven to 400°F. Pierce 3–4 medium sweet potatoes and bake for 45 minutes until fork tender. Let cool, peel, and mash. Measure out 2 cups.
  2. Preheat oven to 350°F and line an 8×4-inch loaf pan with parchment paper, leaving an overhang on both sides. Lightly oil any exposed parts of the pan.
  3. In a small bowl, mix ground flax and water to make the flax egg. Let sit until thickened.
  4. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and orange zest. Set chopped chocolate aside for later.
  5. In a large bowl, whisk brown sugar and olive oil until smooth. Stir in vanilla and mashed sweet potato until well combined.
  6. Pour wet ingredients into the dry ingredients and fold gently with a spatula until just combined. Fold in chopped chocolate.
  7. Transfer batter into the prepared loaf pan and place it on a rimmed baking sheet.
  8. Bake at 350°F for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Let cool in the pan for at least 30 minutes before lifting out using the parchment handles. Cool completely before slicing.

Notes

  • Store leftovers wrapped in parchment at room temperature for up to 3 days.
