Churro cheesecake bites are a delightful and easy-to-make party dessert featuring a creamy cheesecake filling wrapped in flaky crescent roll dough. Coated in a crispy cinnamon-sugar mixture and baked to golden perfection, these bite-sized treats combine the flavors of classic churros with rich cheesecake, making them perfect for any celebration or casual get-together.

  • Total Time: 1 hour
  • Yield: 24 bites

Ingredients

Cheesecake Filling

  • 8 oz cream cheese, softened to room temperature
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt

Churro Coating

  • ⅓ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, melted (for coating)

Base

  • 8 oz crescent roll dough (1 refrigerated tube)
  • 2 tablespoons butter, melted (for brushing before baking)

Instructions

  1. Preheat and prepare: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to ensure the bites don’t stick and bake evenly.
  2. Make the cheesecake filling: In a bowl, beat the softened cream cheese, granulated sugar, egg yolk, vanilla extract, and salt until the mixture is completely smooth and creamy. This will form the luscious filling inside each bite.
  3. Prepare the dough: Unroll the crescent roll dough and cut the triangles in half carefully using a sharp knife or pizza cutter. Gently stretch each piece to make it slightly larger and easier to fold around the filling.
  4. Assemble bites: Place about 1 teaspoon of the cheesecake filling in the center of each stretched dough piece. Fold the dough over the filling, pinch the edges tightly to seal, and then roll each piece gently into an oval-shaped bite.
  5. Brush and bake: Arrange the shaped bites on the prepared baking sheet. Brush the tops with melted butter to achieve a golden crust and bake in the preheated oven for 12 to 15 minutes, or until the bites are puffed and golden brown.
  6. Cinnamon-sugar coating: While the bites are still warm, brush them with the remaining melted butter, then roll each bite in the cinnamon-sugar mixture (made by combining granulated sugar and ground cinnamon) to create the signature churro coating.

Notes

  • Ensure the cream cheese is fully softened to avoid lumps in the filling.
  • Handle the dough gently when stretching to prevent tearing.
  • Use a small scoop or teaspoon for consistent filling amounts.
  • Serve these bites warm for the best flavor and texture.
  • Can be stored in an airtight container for up to 2 days, best reheated slightly before serving.
