A refreshing and tangy cilantro lime slaw made with a creamy Greek yogurt dressing, fresh herbs, and a hint of spice. Perfect as a light side dish or topping for tacos, this slaw combines crisp cole slaw mix with a flavorful blend of lime, cilantro, and cumin for a vibrant, healthy salad ready in just 10 minutes.

  • Total Time: 10 minutes
  • Yield: 4 servings

Ingredients

Slaw Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup tightly-packed fresh cilantro
  • 1/4 cup freshly-squeezed lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper
  • 3 green onions (just the green parts)
  • 2 garlic cloves
  • (optional) 1 jalapeño or serrano pepper (stemmed and cored)

Slaw Base

  • 1 (14-ounce) bag cole slaw mix (about 7-8 cups)

Instructions

  1. Prepare the Dressing: Combine the Greek yogurt, cilantro, lime juice, cumin, sea salt, black pepper, green onions, garlic, and jalapeño (if using) in a blender or food processor. Pulse a few times briefly until the mixture is well blended and creamy.
  2. Toss the Slaw: Place the cole slaw mix in a large mixing bowl. Drizzle the prepared dressing over the slaw mix. Toss thoroughly until all the slaw is evenly coated in the dressing. Taste and adjust seasoning by adding additional black pepper or lime juice if desired.
  3. Serve or Chill: Serve the cilantro lime slaw immediately for a fresh crunch, or cover and refrigerate for up to 24 hours to allow flavors to meld and the slaw to soften slightly.

Notes

  • For a spicier slaw, keep some of the jalapeño seeds when blending.
  • If you prefer a dairy-free version, substitute the Greek yogurt with a plant-based yogurt.
  • The slaw can be prepared a few hours ahead to enhance the flavors but is best within 24 hours.
  • Adjust the amount of lime juice and salt to your taste preference.
