Ingredients
Fish and Seasoning
- 1 (1 ounce) packet taco seasoning
- 2 tablespoons olive oil
- 1 pound cod filets (or 1 lb white fish)
Tortillas
- 8 4-inch corn tortillas (or flour tortillas)
Toppings (as desired)
- Avocado
- Shredded cabbage
- Salsa
- Sour cream
- Jalapenos
- Cilantro
- Cheese
Instructions
- Preheat the oven: Preheat your oven to 400℉ to prepare for baking the fish evenly and quickly.
- Prepare the seasoning mixture: In a small bowl, combine the taco seasoning packet with 2 tablespoons of olive oil to create a flavorful rub for the fish.
- Season the fish: Rub the seasoning mixture over both sides of the cod filets ensuring even coverage for maximum flavor.
- Bake the fish: Place the seasoned fish on a baking sheet and bake for 12 to 16 minutes, or until the internal temperature reaches 145℉. Keep an eye on thinner pieces as they cook faster.
- Warm the tortillas: While the fish bakes, warm the corn tortillas according to package instructions to make them soft and pliable for easy folding.
- Assemble the tacos: Once the fish is cooked, break it into large chunks and portion onto tortillas. Top with your choice of avocado, shredded cabbage, salsa, sour cream, jalapenos, cilantro, and cheese before serving.
Notes
- Use corn tortillas for a traditional taco experience or substitute with flour tortillas if preferred.
- Adjust the amount of taco seasoning to suit your taste preference or dietary needs.
- Check the fish early during baking as thinner fillets cook quickly and may dry out if overbaked.
- Feel free to add lime wedges on the side for an extra burst of freshness.
- This recipe can be doubled easily to serve a larger crowd.
