This Cookie Butter Granola combines crunchy oats and almonds with the warm, spiced sweetness of cookie butter and honey. Baked to a golden crisp, it makes a perfect breakfast or snack that’s easy to prepare and irresistibly delicious.

  • Total Time: 40 minutes
  • Yield: 3 servings

Ingredients

Dry Ingredients

  • 2 cups (210 grams) rolled oats
  • 1 cup (145 grams) whole, raw almonds, roughly chopped
  • 2 tablespoons (26 grams) light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/3 cup (80 grams) cookie butter (speculoos spread)
  • 1/4 cup (60 milliliters) honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 325˚F (160˚C) and line a rimmed baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Combine Dry Ingredients: In a large bowl, toss together the rolled oats and roughly chopped almonds to evenly distribute the nuts.
  3. Heat Wet Ingredients: Place the cookie butter and honey in a medium microwave-safe bowl. Microwave in 20-second increments, stirring between each, until the mixture is warmed and thinned to a pourable consistency, about 40-60 seconds total.
  4. Add Flavorings: Stir the light brown sugar, vanilla extract, ground cinnamon, and salt into the warmed cookie butter and honey mixture until fully combined.
  5. Coat the Oats and Nuts: Immediately pour the cookie butter mixture over the oat and almond mixture. Toss thoroughly to ensure everything is evenly coated with the sweet, spiced mixture.
  6. Spread on Baking Sheet: Spread the coated granola mixture into a single, even layer on the prepared baking sheet for uniform baking.
  7. Bake the Granola: Bake in the preheated oven for 15 minutes to start crisping the granola.
  8. Stir and Continue Baking: Remove from the oven, stir and toss the granola to break up any clumps and redistribute the ingredients. Return to the oven and bake for another 10 minutes or until the granola is dried and beautifully golden brown.
  9. Cool and Store: Allow the granola to cool for 1-2 hours so it forms defined clusters. Once completely cooled to room temperature, break apart and transfer to an airtight container to keep it fresh.

Notes

  • Use parchment paper or a silicone baking mat to prevent sticking and allow for easier cleanup.
  • To make clusters, avoid stirring too vigorously when coating and baking the granola.
  • Store granola in an airtight container at room temperature for up to 2 weeks.
  • You can swap almonds for other nuts like pecans or walnuts if desired.
  • The microwave step is essential to melt and blend the cookie butter and honey for even coating.
