Ingredients
Cookie Dough
- 1 cup unsalted butter (softened)
- 2 cups light brown sugar
- 2 tsp pure vanilla extract
- 2 large eggs
- 3 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups semi sweet chocolate chips
Ice Cream
- About 4 cups vanilla ice cream (approximately 1/2 cup per ice cream sandwich depending on size)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare two baking pans by spraying with baking spray or lining them with parchment paper. Set aside.
- Mix Butter, Sugar and Vanilla: In a large bowl, combine the softened butter, light brown sugar, and vanilla extract. Use an electric mixer on medium-high speed to whip the mixture until it becomes creamy and smooth.
- Add Eggs: Add the eggs one at a time into the butter mixture, beating well after each addition. Occasionally scrape down the sides of the bowl to ensure everything is well mixed.
- Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to evenly distribute all leavening agents and salt.
- Incorporate Dry Ingredients: With the mixer on low speed, gradually add the dry ingredients to the wet ingredients bowl, mixing until the dough is fully combined.
- Add Chocolate Chips: Fold in the semi-sweet chocolate chips by hand, ensuring they are evenly distributed throughout the cookie dough.
- Shape Cookies: Using a medium-sized scoop, portion the dough into 16 even portions. Place each portion onto the prepared baking pans, spacing them at least 2 inches apart to allow for spreading.
- Bake Cookies: Bake the cookies in the preheated oven for 10-12 minutes or until they are lightly golden around the edges and the centers are fully cooked. Once baked, transfer the cookies to the freezer for about 20 minutes to cool completely and firm up.
- Assemble Ice Cream Sandwiches: After the cookies have cooled, scoop approximately 1/2 cup of vanilla ice cream onto the flat side of one cookie. Sandwich it with another cookie by placing it on top and gently pressing together to evenly distribute the ice cream.
- Serve or Store: Enjoy your ice cream sandwiches immediately, or place them in an airtight container and freeze until ready to serve for a chilled treat.
Notes
- Make sure the butter is softened to room temperature for easy whipping.
- Chilling the cookies before assembling helps prevent the ice cream from melting too quickly.
- Feel free to substitute vanilla ice cream with other flavors like chocolate or strawberry for variety.
- You can store the assembled sandwiches in the freezer for up to one week for best quality.
- If the dough spreads too much while baking, consider chilling the dough before baking to maintain shape.
