Delicious and crispy Corn Fritters made with fresh corn kernels, sharp cheddar cheese, and a blend of flavorful spices. These golden-brown fritters are pan-fried to perfection in a cast-iron skillet and served with a dollop of sour cream, making a perfect appetizer or side dish that’s quick and easy to prepare.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Wet Ingredients

  • 6 tablespoons milk
  • 1 large egg
  • 1 teaspoon apple cider vinegar
  • Neutral oil (for the pan)
  • Sour cream (for serving)

Vegetables

  • 2 cups corn kernels (from about 3 ears fresh corn)
  • ¾ cup chopped scallions (about 5, plus more for garnish)

Dairy

  • 1 cup grated sharp cheddar cheese

Dry Ingredients & Spices

  • 1½ teaspoons sea salt
  • 1 teaspoon onion powder
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon smoked paprika
  • Freshly ground black pepper (to taste)
  • ¾ cup cornmeal (spooned and leveled)
  • ½ cup all-purpose flour (spooned and leveled)

Instructions

  1. Prepare the batter: In a large bowl, whisk together the milk and egg until smooth. Add the corn kernels, chopped scallions, grated cheddar cheese, and apple cider vinegar. Stir to combine all the wet ingredients evenly.
  2. Season the mixture: Sprinkle the sea salt, onion powder, baking powder, garlic powder, cayenne pepper, smoked paprika, and freshly ground black pepper over the mixture. Stir again to integrate all the spices throughout the batter.
  3. Add dry ingredients: Sprinkle the cornmeal and all-purpose flour over the batter and gently fold until everything is well combined, forming a thick batter suitable for frying.
  4. Heat the skillet and prepare for frying: Coat the bottom of a cast-iron skillet with a thin layer of neutral oil and heat it over medium heat until hot but not smoking.
  5. Form and cook the fritters: Use a ¼-cup measuring cup to scoop the batter into the skillet. Use the back of the measuring cup or a spatula to gently press each scoop into a flattened disk about 3 inches in diameter. Fry each fritter for 2 to 3 minutes on each side, or until golden brown and cooked through, adjusting heat as necessary to avoid burning.
  6. Complete cooking batches: Work in batches to avoid overcrowding the pan. Wipe out the skillet and add more oil between batches to maintain proper cooking conditions.
  7. Serve: Once cooked, transfer the fritters to a serving plate. Garnish with additional chopped scallions and serve warm with a dollop of sour cream on the side for dipping.

Notes

  • Use fresh corn for the best flavor, but frozen corn kernels can be substituted if needed.
  • Adjust the amount of cayenne pepper to control the heat level of the fritters.
  • Make sure the oil is hot before frying to ensure crispy edges without absorbing too much oil.
  • These fritters can be kept warm in an oven set at 200°F (90°C) while cooking remaining batches.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
