4.1 from 1 review

These crispy and flavorful corn fritters are perfect as a snack, appetizer, or side dish. Made with fresh or thawed corn, cheddar cheese, and a touch of jalapeños for a mild kick, they are pan-fried to golden perfection and ideal for serving warm with your favorite dipping sauces.

  • Total Time: 22 minutes
  • Yield: 10 servings

Ingredients

Dry Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Wet Ingredients

  • 1 large egg
  • ⅓ cup milk
  • 1 teaspoon fresh lime juice (optional)

Main Ingredients

  • 2 cups corn (fresh, frozen and thawed, or canned and drained)
  • ½ cup cheddar cheese (shredded)
  • 1 tablespoon jalapeños (finely chopped)
  • 2 tablespoons green onions (chopped)

For Frying

  • 3 tablespoons oil (for frying)

Instructions

  1. Combine dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper until well combined.
  2. Add egg and milk: Pour the egg and milk into the dry mixture and stir gently just until a smooth, thick batter forms without overmixing.
  3. Fold in main ingredients: Carefully fold the corn, shredded cheddar cheese, finely chopped jalapeños, green onions, and lime juice if using into the batter until everything is evenly coated and the mixture is thick and chunky.
  4. Heat oil in skillet: Add the oil to a large skillet and warm over medium heat until it shimmers but does not smoke, ensuring it's hot enough for frying.
  5. Form fritters and fry: Scoop heaping spoonfuls of batter into the hot skillet, spacing them apart. Gently press each into a small patty shape with the back of a spoon or spatula for even cooking.
  6. Cook first side: Fry the fritters for 2-3 minutes without disturbing until the bottoms turn golden brown and set properly.
  7. Flip and cook second side: Carefully flip each fritter and cook for an additional 2-3 minutes until crisp around the edges and cooked through.
  8. Drain and serve: Transfer the cooked fritters to a wire rack or paper towel-lined plate to remove excess oil. Repeat the process with remaining batter, adding more oil as needed. Serve warm with sour cream, Greek yogurt, chipotle sauce, or your preferred dipping sauce.

Notes

  • For best results, use fresh or frozen corn that's been thawed and drained well to avoid excess moisture in the batter.
  • You can adjust the spiciness by adding more or less jalapeños depending on your preference.
  • If batter is too thick to scoop easily, add a splash more milk to loosen it slightly.
  • Keep cooked fritters warm in a low oven if preparing in batches.
  • These fritters can be reheated in a skillet or oven to maintain crispiness.
