- 1 packet taco seasoning

Toppings (Optional)

- Green bell pepper, diced
- Red bell pepper, diced
- Diced yellow onion
- Additional shredded cheese

- Pico de gallo
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray to prevent sticking during baking.
- Brown the Beef: In a large skillet over medium-high heat, cook 1.5 pounds of lean ground beef until browned and fully cooked. Drain off any excess grease to keep the casserole from being greasy.
- Make Cornbread Batter: In a large bowl, combine 2 boxes of Jiffy Cornbread Mix with 2 eggs and 2/3 cup milk. Stir until the mixture is smooth and well combined.
- Combine Beef Mixture: Return the cooked beef to the skillet and add 1 can of Rotel tomatoes (or diced tomatoes with green chilies), 1 drained can of sweet corn, 1 can of black beans (or Ranch Style Beans), and 1 packet of taco seasoning. Stir well and cook for an additional 2-3 minutes until heated through and flavors meld together.
- Assemble Casserole: Pour the beef and bean mixture evenly into the prepared baking dish. Sprinkle 1 cup of shredded Mexican blend cheese evenly over the beef layer.
- Add Cornbread Topping: Pour the prepared cornbread batter over the cheese and meat layer, spreading it evenly to cover the entire surface.
- Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cornbread topping is golden brown and fully cooked through.
- Cool and Serve: Remove the casserole from the oven and let it cool for a few minutes to set. Serve warm topped with optional toppings such as chopped bacon, diced bell peppers, yellow onions, extra shredded cheese, sour cream, and pico de gallo for extra flavor and texture.
Notes
- For spicier flavor, use a hotter variety of canned tomatoes with chilies or add extra taco seasoning.
- Drain excess grease from the beef thoroughly to avoid a soggy casserole.
- Ranch Style Beans can be substituted for black beans for added flavor.
- Feel free to customize toppings to your preference, such as adding sliced jalapeños or avocado.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
