Ingredients
Vegetables and Aromatics
- 1 medium yellow onion, diced
- 3 celery stalks, diced
- 2 large carrots, diced
- 4-6 garlic cloves, minced
- 1 pound Yukon gold potatoes, diced (about 4 medium potatoes)
- 14.5 ounces green beans, drained
- 14.5 ounces diced tomatoes with juices
Protein
- 2 pounds ground beef
- 15 ounces black beans, drained and rinsed
Liquids
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- 6 cups beef broth (more if needed)
Seasonings
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 2 teaspoons cayenne pepper
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Sauté the Vegetables: Heat 2 tablespoons of olive oil in a large soup pot over medium heat. Add the diced onion, celery, carrots, and minced garlic cloves. Sauté these aromatics for 6 to 7 minutes until they are softened and fragrant.
- Brown the Ground Beef: Add the 2 pounds of ground beef to the pot with the sautéed vegetables. Break the meat apart using a spatula and cook until the beef begins to brown evenly.
- Add Worcestershire Sauce: Once the meat starts to brown, stir in 1 tablespoon of Worcestershire sauce to enhance the savory flavor of the beef mixture.
- Add Remaining Ingredients: Stir in the diced Yukon gold potatoes, green beans, diced tomatoes with juices, black beans, oregano, thyme, smoked paprika, cayenne pepper, kosher salt, and black pepper. Pour in 6 cups of beef broth, stirring everything together.
- Simmer the Soup: Bring the soup to a rolling boil, then reduce the heat to low. Let it simmer gently for 20-25 minutes, or until the potatoes are tender and all flavors have melded together beautifully.
- Serve: Ladle the hot soup into bowls and garnish with fresh herbs if you like. Serve warm for a hearty and comforting meal.
Notes
- You can adjust cayenne pepper to reduce or increase the heat according to your preference.
- If the soup thickens too much during simmering, add more beef broth or water to reach your desired consistency.
- For a slightly smoky flavor, use smoked sea salt instead of kosher salt, if desired.
- Leftovers store well in the refrigerator for up to 3 days and can be frozen for longer storage.
- To make it a little lighter, substitute ground turkey or chicken for the beef.
