Relish

  • 12 oz fresh cranberries
  • 1 large orange (zested & juiced, approximately 1/4-1/3 cup juice)
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup water
  • 1/8 teaspoon salt
  • 1/4 cup pecans, chopped

Instructions

  1. Combine Ingredients: In a medium saucepan over medium heat, add the fresh cranberries, water, honey, orange juice, ground cinnamon, orange zest, and salt. Stir everything together thoroughly to combine all the flavors evenly.
  2. Bring to Boil and Simmer: Allow the mixture to come to a boil, stirring occasionally to prevent sticking. Once boiling, reduce the heat to low and let it simmer gently for 10 to 15 minutes. Stir occasionally until the cranberries break down and the sauce thickens, maintaining a chunky texture.
  3. Add Pecans and Cool: Remove the saucepan from heat and fold in the chopped pecans. Let the relish cool at room temperature until no longer hot, then transfer it to a suitable container. Cover it and refrigerate for at least one hour to allow the flavors to meld.
