This creamy cilantro lime tahini dressing is a tangy, flavorful, and easy-to-make sauce perfect for enhancing salads, bowls, wraps, tacos, and more. Made with simple ingredients like tahini, fresh cilantro, lime juice, and rice vinegar, it offers a delightful balance of creamy texture and zesty brightness. The dressing can be customized for consistency and taste, making it a versatile addition to your kitchen.

  • Total Time: 7 minutes
  • Yield: About 1 ½ cups (350 ml)

Ingredients

Ingredients

  • 60 g Tahini (⅓ cup)
  • 60 g Cilantro (stems and leaves, ½ cup packed)
  • 48 g Rice vinegar (¼ cup)
  • 79 g Oil (olive, avocado, or another light oil for dressing, ⅓ cup)
  • 4 cloves Garlic (peeled and minced)
  • 1 Lime (zest and juice - about 2 tablespoons juice)
  • ½ teaspoon Kosher salt
  • 3-4 tablespoons Water (as needed for thinning)

Instructions

  1. Combine Ingredients: Add tahini, cilantro (half or all depending on desired texture), rice vinegar, oil, garlic, lime zest and juice, and kosher salt to a blender.
  2. Blend Dressing: Blend all ingredients until smooth. For a chunkier texture, blend half the cilantro thoroughly and then add the rest, blending only until combined.
  3. Adjust Consistency and Flavor: Taste the dressing and add more tahini, oil, vinegar, salt, or lime juice to suit your preferences. If a thinner dressing is desired, add water one tablespoon at a time, blending after each addition until you reach the desired consistency.
  4. Chill: Transfer the dressing to a jar with a lid and chill completely. The dressing will thicken further when chilled.
  5. Storage: Keep the dressing refrigerated and it will last up to two weeks.

Notes

  • Dressing thickens as it chills; adjust water accordingly for serving consistency.
  • Blend cilantro in two stages to control texture, either fully blended or with some larger pieces.
  • Use light oils like olive or avocado for best flavor and consistency.
  • Lasts up to two weeks when kept refrigerated in a sealed container.
