Ingredients
Sauté Base
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small yellow onion, diced
- 1 large carrot, sliced into coins
Meat and Seasoning
- 1 pound ground turkey (or Italian sausage)
- Salt and fresh ground black pepper, to taste
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Soup Base
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
Main Ingredients
- 1 package (20 ounces) fresh cheese ravioli
- 6 cups fresh baby spinach
- 2 cups half and half (or heavy cream)
- ½ cup Parmesan cheese, grated, plus more for garnish
Instructions
- Sauté Vegetables: Heat olive oil and butter in a large stock pot or Dutch oven over medium heat. Add diced onions and carrot slices, cooking for about 3 minutes until softened.
- Cook Meat: Add ground turkey to the pot and cook until browned, breaking it apart as it cooks. Drain grease if necessary.
- Add Aromatics and Herbs: Stir in minced garlic, dried basil, and dried oregano, cooking for 2 minutes to release their flavors.
- Simmer Soup Base: Pour in the crushed tomatoes and chicken broth. Bring the mixture to a boil.
- Cook Ravioli: Add the fresh cheese ravioli to the boiling soup. Cook for about 6 minutes or until ravioli are tender.
- Add Greens: Stir in fresh baby spinach and cook for 2 minutes, until the spinach wilts.
- Add Cream and Cheese: Slowly stir in half and half or heavy cream. Return soup to a gentle simmer, then stir in grated Parmesan cheese. Season with salt and black pepper to taste.
- Serve: Ladle the creamy ravioli soup into bowls and garnish with additional Parmesan cheese as desired. Serve hot.
Notes
- You can substitute ground turkey with Italian sausage for a richer flavor.
- Fresh cheese ravioli can be replaced with frozen ravioli; adjust cooking time accordingly.
- For a dairy-free option, use coconut cream instead of half and half and omit Parmesan cheese.
- Adding fresh herbs like basil or parsley as garnish enhances freshness.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
