Ingredients
Vegetables
- 2 pounds ripe tomatoes, halved
- 1 red pepper, cut into chunks
- 1 large onion, cut into quarters
- 1 celery rib, diced
- 4 garlic cloves, whole
Seasonings & Liquids
- 3 Tbsp olive oil, drizzle
- 1 tsp salt
- ¼ tsp black pepper
- 2 tsp sugar
- 2 tsp Italian seasoning
- 2 cups vegetable broth
- ¼ cup heavy cream
Garnish
- Fresh basil (optional)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper for easy cleanup.
- Prepare and roast vegetables: Place the halved tomatoes, red pepper chunks, onion quarters, diced celery, and whole garlic cloves on the baking sheet. Drizzle with olive oil to coat evenly.
- Season the vegetables: In a small bowl, mix salt, black pepper, sugar, and Italian seasoning. Sprinkle this seasoning blend over the vegetables on the baking sheet to enhance flavor during roasting.
- Roast until tender: Roast the seasoned vegetables in the oven for 30 minutes until they become soft and slightly caramelized, which deepens the soup’s flavor.
- Blend the roasted vegetables: Transfer the roasted vegetables to a blender and puree until completely smooth to create the soup base.
- Cook the soup: Pour the pureed vegetable mixture into a Dutch oven over medium-low heat. Add the vegetable broth and heavy cream, stirring to combine. Heat gently until the soup reaches a soft boil, allowing flavors to meld.
- Serve: Ladle the bisque into bowls, garnish with fresh basil if desired, and enjoy warm with friends and family.
Notes
- For a vegan version, substitute heavy cream with coconut cream or a plant-based alternative.
- Use ripe and fresh tomatoes for the best flavor.
- Adjust seasoning to taste, especially salt and sugar, depending on the sweetness of your tomatoes.
- Serve with crusty bread or croutons for a satisfying meal.
- Use an immersion blender directly in the pot if you prefer to skip transferring to a blender.
