This creamy and comforting Chicken Spaghetti with Rotel combines tender cooked chicken, cheesy sauce, and spicy tomatoes for a deliciously easy casserole. Perfect for weeknight dinners, this recipe blends rotel tomatoes with green chiles, cream cheese, cheddar, and a hint of ranch seasoning baked over tender spaghetti noodles.

  • Total Time: 35 minutes
  • Yield: 8 servings

Ingredients

Chicken and Pasta

  • 3 cups boneless skinless chicken breasts, cooked and diced
  • 16 ounces spaghetti noodles, broken into 3 pieces

Cheese Sauce

  • 21 ounces cream of chicken soup (two 10.5-ounce cans)
  • 10 ounces can of RoTel Tomatoes (tomatoes with green chiles, undrained)
  • 6 ounces cream cheese
  • 10 ounces evaporated milk
  • 1 tablespoon ranch dressing (dry mix)

Topping

  • 3 cups cheddar cheese, shredded

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish with nonstick cooking spray to prevent sticking and set it aside.
  2. Cook Spaghetti: Bring a large pot of well-salted water to a boil. Add the spaghetti noodles broken into thirds and cook according to the package directions until al dente. Drain the pasta well and set aside.
  3. Prepare Cheese Sauce: In a large pot over low heat, combine the undrained RoTel tomatoes, cream of chicken soup, evaporated milk, and cream cheese. Stir constantly until the cream cheese melts completely and the sauce is smooth and creamy.
  4. Combine Ingredients: Stir in the dry ranch dressing mix, diced cooked chicken, and the cooked spaghetti noodles. Mix thoroughly to ensure the chicken and pasta are evenly coated with the sauce.
  5. Assemble Casserole: Pour the mixture into the prepared casserole dish. Evenly sprinkle the shredded cheddar cheese over the top of the casserole.
  6. Bake: Place the casserole in the preheated oven and bake uncovered for 20 to 30 minutes, or until the dish is heated through, bubbly, and the cheese is melted.
  7. Optional Broil: For a golden brown and slightly crispy cheese topping, place the casserole under the oven broiler for 3 to 4 minutes. Watch closely to prevent burning.

Notes

  • Use cooked chicken leftover from a roast or rotisserie chicken to save time.
  • Ensure to break spaghetti noodles into smaller pieces so they mix well and fit in the casserole dish.
  • If you prefer less spice, drain some of the liquid from the RoTel tomatoes before mixing.
  • The casserole can be prepared ahead and refrigerated, then baked before serving.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely.
  • Use sharp cheddar cheese for the best flavor contrast with the creamy sauce.
