Creamy Tuscan Garlic Shrimp is a rich and flavorful dish featuring seared shrimp simmered in a luscious cream sauce with sun-dried tomatoes, garlic, parmesan, and fresh spinach. Ready in under 30 minutes, this indulgent meal pairs beautifully with pasta, couscous, or orzo, making it perfect for a quick yet elegant dinner.

  • Total Time: 30 minutes
  • Yield: 5 servings

Ingredients

Shrimp

  • 1 pound shrimp – raw, peeled and deveined (tails on or off)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons extra virgin olive oil (evoo)

Sauce

  • 1 small onion, diced
  • 1 tablespoon garlic, chopped
  • 7 oz jar sun-dried tomatoes, drained and roughly chopped
  • 1 3/4 cup heavy cream
  • 2 cups fresh spinach leaves, loosely packed
  • ½ cup grated parmesan cheese
  • Basil for garnish

Instructions

  1. Season and sear the shrimp: Season the shrimp with salt and pepper. Heat the olive oil in a large skillet over medium heat. Add the shrimp and sear on both sides until they just start turning pink and are slightly seared. Remove shrimp from the pan and set aside.
  2. Sauté onions and garlic: In the same skillet, add diced onion and chopped garlic. Sauté for several minutes until the onion becomes translucent and the mixture is fragrant.
  3. Add sun-dried tomatoes and cream: Stir in the chopped sun-dried tomatoes. Pour in the heavy cream and stir everything together to combine well.
  4. Add spinach, parmesan, and shrimp: Stir in the fresh spinach leaves and grated parmesan cheese until the spinach begins to wilt. Return the shrimp to the skillet and stir gently to coat everything in the creamy sauce.
  5. Simmer until cooked through: Allow the mixture to simmer for several minutes until the sauce thickens slightly and the shrimp are fully cooked.
  6. Serve and garnish: Serve the creamy Tuscan garlic shrimp over pasta, orzo, couscous, or mashed potatoes. Garnish with chopped basil and enjoy your meal!

Notes

  • You can use tails on or off for the shrimp based on your preference.
  • To reduce cooking time, have all ingredients prepped before starting to cook.
  • For a lighter version, substitute heavy cream with half-and-half or a light cream alternative, though the sauce will be less rich.
  • If you prefer a spicier kick, add red pepper flakes when sautéing the onions and garlic.
  • Leftovers can be refrigerated for up to 2 days and reheated gently to avoid curdling the cream sauce.
