A creamy and healthy vegan butternut squash pasta sauce made from roasted butternut squash, fresh tomatoes, and onions. This recipe uses simple ingredients and stove and oven methods to create a comforting and flavorful sauce that pairs perfectly with your favorite pasta.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Vegetables & Sauce

  • 16 oz bag of frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion, sliced

Seasonings & Oil

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme

Pasta

  • 1 lb pasta
  • 1/3 cup reserved pasta water (from cooked pasta)

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Vegetables for Roasting: Place the frozen diced butternut squash, chopped tomatoes, and sliced onion evenly onto the prepared baking sheet. Drizzle the olive oil over the vegetables, then sprinkle with salt, black pepper, and dried thyme. Toss everything gently on the sheet to evenly coat with the oil and seasonings.
  3. Roast the Vegetables: Place the baking sheet in the preheated oven and roast for 20 minutes until the butternut squash is tender and the tomatoes and onions have softened and slightly caramelized.
  4. Cook the Pasta: While the vegetables roast, bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Before draining, reserve 1/3 cup of the pasta cooking water to use in the sauce.
  5. Blend the Sauce: Immediately transfer the hot roasted vegetables to a blender. Add the reserved pasta water to the blender and blend until the mixture becomes a smooth, creamy sauce.
  6. Toss Pasta with Sauce: Pour the creamy butternut squash sauce over the drained pasta and toss well to coat every piece evenly.
  7. Serve: Serve the pasta hot, topped optionally with parmesan cheese or a plant-based parmesan alternative for a vegan option. Enjoy your nutritious and comforting meal!

Notes

  • You can substitute fresh butternut squash for frozen if preferred, just be sure to cube it evenly.
  • If you want a spicier sauce, add a pinch of red pepper flakes before blending.
  • For a nutty flavor, garnish with toasted pine nuts or walnuts.
  • Leftover sauce can be stored in the refrigerator for up to 3 days and reheated gently with a splash of water.
  • This sauce also works well as a base for baked pasta dishes or as a creamy soup base.
