Ingredients
Avocado Coating
- 2 avocados
- ½ cup all-purpose flour
- 2 large eggs (whisked)
- 1 cup panko crumbs (60 g)
- Pinch salt and pepper
- Oil (to brush on or spray)
Adobo Sauce
- ¼ cup plain yogurt (60 g)
- 2 Tbsp mayonnaise (30 g)
- ¼ tsp lime juice
- 1 Tbsp adobo sauce (from a jar of chipotle peppers)
Taco Assembly
- 8 flour tortillas
- Pickled red onions (prepared separately)
- Refried beans (prepared separately)
- Fresh cilantro
Instructions
- Prep Avocado: Cut the avocados in half lengthwise and remove the pits. Place each half skin side down and cut into 4 equal-sized slices. Gently peel the skin off each slice to prepare for breading.
- Prep Station: Preheat your oven to 400°F (218°C) or air fryer to 375°F (190°C). Set up three bowls: one with the flour, one with the whisked eggs, and one with panko crumbs mixed with salt and pepper. Prepare a baking sheet for baking the avocado slices.
- Coat: Dip each avocado slice first into the flour, then into the egg wash, and finally coat evenly with the panko breadcrumbs. Place each slice on the baking sheet and brush or spray generously with oil for crispiness.
- Bake: Bake in the oven or air fry for 15 to 18 minutes, flipping the slices halfway through. Cook until the avocado slices are lightly browned and crispy on the outside.
- Sauce: While baking, mix together plain yogurt, mayonnaise, lime juice, and adobo sauce to create a creamy, smoky adobo sauce to drizzle over the tacos.
- Serve: Warm the flour tortillas and layer with refried beans, crispy avocado slices, pickled red onions, a drizzle of adobo sauce, and garnish with fresh cilantro. Serve immediately and enjoy!
Notes
- Use ripe but firm avocados to ensure they hold shape during breading and baking.
- For a lighter option, opt for spraying oil instead of brushing.
- Adjust the spice in the adobo sauce by modifying the amount of adobo sauce or adding chipotle peppers directly.
- Pickled red onions and refried beans should be prepared ahead or store-bought versions can be used.
- These tacos can be customized with additional toppings like shredded lettuce or cheese, if desired.
