Ingredients
Filling
- 2 cups shredded cooked chicken
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cumin
- ¼ tsp salt
Other
- 16 small corn tortillas
- Cooking spray (non-stick spray)
Instructions
- Preheat Oven: Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with a cooling rack or parchment paper and set aside to prepare for baking the taquitos.
- Prepare Filling: In a large bowl, combine the shredded cooked chicken with chili powder, garlic powder, onion powder, cumin, and salt. Stir thoroughly to evenly distribute the spices throughout the chicken mixture.
- Warm Tortillas: Heat a non-stick skillet over medium heat. Warm each corn tortilla for 30 to 45 seconds on each side until heated through. Then place the warmed tortillas in a zip-close plastic bag to steam and soften, making them easier to roll.
- Assemble Taquitos: Remove a tortilla from the bag and place about 2 tablespoons of the chicken mixture in a line along one edge. Roll the tortilla tightly around the filling, then place it seam-side down onto the prepared baking sheet on the rack or parchment paper. Repeat with all tortillas, spacing them evenly to ensure crisping.
- Spray and Bake: Spritz all sides of the rolled taquitos lightly with cooking spray to promote browning and crispness. Bake in the preheated oven for 18 minutes, then carefully flip each taquito and continue baking for an additional 5 minutes until they are golden brown and crispy.
- Serve: Remove the taquitos from the oven and serve hot with your favorite dips, such as guacamole, salsa, or sour cream. Enjoy this flavorful and crispy Mexican treat!
Notes
- Warming the tortillas before rolling prevents cracking and helps them become pliable.
- Use a cooling rack on the baking sheet for airflow to crisp the taquitos evenly.
- Leftover taquitos can be stored in the refrigerator and reheated in the oven to maintain crispiness.
- For extra crunch, you can lightly spray the taquitos again halfway through baking after flipping.
- Chicken can be substituted with cooked shredded beef or turkey as desired.
