Ingredients
Main Ingredients
- 1 Tbsp olive oil (15 mL)
- ½ medium yellow onion, diced
- 2 cloves garlic, minced
- ½ tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp ground coriander seeds
- ½ tsp black pepper
- ¼ tsp salt
- 2 13-oz cans cannellini beans, drained (approx. 740 g total)
- ½ cup buffalo sauce (120 g)
- 8 small corn tortillas
- 2 to 4 Tbsp oil, for frying
Instructions
- Flavor Base: Heat 1 Tbsp olive oil over medium heat in a large skillet. Add the diced onion and minced garlic, cooking until the onion becomes soft and fragrant, roughly 4 minutes. Stir in smoked paprika, cumin, coriander seeds, black pepper, and salt, cooking for another minute to toast the spices and deepen flavor.
- Mash: Add the drained cannellini beans and buffalo sauce to the skillet. Using a potato masher or fork, roughly mash the beans until they’re well combined with the sauce, creating a chunky texture. Scoop the mixture out into a bowl and set aside. Clean the skillet by rinsing it, then return it to the stove for cooking the tacos.
- Assemble: Wrap the corn tortillas in a damp paper towel and microwave for 45 seconds to make them soft and pliable. Spoon an even amount of the buffalo bean mixture into each tortilla, folding them gently in half. Lightly coat the skillet with 2 to 4 tablespoons of oil, and cook the tacos over medium heat in batches, flipping to ensure both sides become crispy and golden.
- Serve: Serve the crispy buffalo white bean tacos warm, paired deliciously with salsa, guacamole, or cilantro sauce for added freshness and flavor.
Notes
- Use a nonstick skillet to prevent sticking while cooking the bean mixture and frying the tacos.
- Adjust buffalo sauce quantity for preferred spice level.
- To make cilantro sauce: blend fresh cilantro, lime juice, garlic, and a bit of yogurt or mayo for a cooling dip.
- Leftover mashed beans can be stored in the fridge for up to 3 days.
- For a gluten-free meal, ensure corn tortillas are certified gluten-free.
