  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

Cheese

  • ¾ cup (1.3 ounces) finely shredded Pecorino Romano cheese
  • ¾ cup (1.3 ounces) finely shredded Parmigiano Reggiano cheese

Potatoes and Seasoning

  • 1 ½ lb. Yukon gold or yellow potatoes (about 5-6 small potatoes)
  • 2 tablespoons salted butter, melted
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • ¾ teaspoon kosher salt
  • 1 ½ teaspoons freshly ground black pepper, plus more for garnish

Garnish

  • Finely chopped parsley
  • Flaky sea salt

Instructions

  1. Preheat oven: Preheat your oven to 350ºF (175ºC) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the cheese bases: Mix the shredded Pecorino Romano and Parmigiano Reggiano cheeses together in a bowl. Take half of this mixture (¾ cup) and make twelve 1-tablespoon piles of cheese spaced evenly on the parchment-lined baking sheet.
  3. Slice and season potatoes: Using a mandoline or a very sharp knife, slice the potatoes into ⅛-inch thick rounds. Place the slices into a large bowl, then add melted butter, minced garlic, lemon zest, kosher salt, and freshly ground black pepper. Toss everything thoroughly by hand to ensure the potato slices are evenly coated in the seasoning mixture.
  4. Assemble the stacks: On top of each mound of cheese, layer the potato slices into stacks approximately 1 ½ inches tall, starting with the widest slices on the bottom and gradually using smaller slices toward the top to form neat stacks. Finish each stack by sprinkling 1 tablespoon of shredded cheese over the top.
  5. Bake the stacks: Place the baking sheet into the preheated oven and roast the potato stacks for 30-35 minutes until the potatoes are tender when pierced with a fork and the cheese on top has turned golden brown and crispy.
  6. Cool and garnish: Allow the stacks to cool on the baking sheet for about 5 minutes to set. Then carefully transfer the potato stacks to a serving platter. Garnish with additional freshly ground black pepper, finely chopped parsley, and flaky sea salt to taste before serving.

Notes

  • Use a mandoline if possible for uniform potato slices and consistent cooking.
  • Ensure potatoes are dry before tossing to help achieve maximum crispiness.
  • If desired, substitute salted butter with unsalted and adjust added salt accordingly.
  • For extra flavor, experiment with adding a pinch of smoked paprika or red pepper flakes in the seasoning step.
  • These stacks are best served warm and fresh from the oven.
  • Leftovers can be reheated in a hot oven or air fryer to restore crispiness.
