Instructions
- Prepare Flour: Add ⅓ cup of all-purpose flour to a bowl and set aside for breading.
- Make Egg Wash: Whisk together 3 large eggs and 2 tablespoons of water in a small bowl, then place it beside the flour bowl.
- Mix Breadcrumb Coating: Combine 1 cup traditional breadcrumbs, 1 cup Panko breadcrumbs, 1 teaspoon Italian seasoning, ½ teaspoon salt, ½ teaspoon garlic powder, and ¼ teaspoon ground black pepper in another bowl.
- Prep Tray: Line a baking tray with parchment paper to place breaded mozzarella sticks on and set it next to the breadcrumb bowl.
- First Coat: Using tongs, dredge each mozzarella stick half in flour, then dip into the egg wash, and coat thoroughly with the breadcrumb mixture. Place on the prepared tray.
- Second Coat: Dip the already breaded sticks again into the egg wash (no flour this time), then coat them a second time completely with the breadcrumb mixture, ensuring all sides and ends are covered. Place back on the tray.
- Freeze: Freeze the double-coated mozzarella sticks for at least 1 hour to firm up the coating and prevent melting during frying.
- Heat Oil: Heat 1 cup of canola oil in a heavy skillet or Dutch oven to 325-350°F, maintaining a steady temperature.
- Fry Mozzarella Sticks: Fry the sticks for 1-2 minutes per side or until they turn golden brown. Avoid overcrowding to maintain oil temperature.
- Drain: Transfer the fried mozzarella sticks onto a paper towel-lined plate to absorb excess oil before serving.
