Ingredients
For the Crispy Smashed Potatoes:
- 1 1/2 pounds small to medium potatoes
- 1 tablespoon oil
- 1 teaspoon chopped thyme
- Salt and pepper to taste
For the Garlic and Sage Browned Butter:
- 4 tablespoons butter
- 2 cloves garlic, chopped
- 2 tablespoons sage leaves, sliced or whole
Instructions
- Boil the Potatoes: Place the potatoes in a pot and cover with water by about an inch. Bring to a boil, then reduce heat and simmer until the potatoes are tender and a fork easily pierces them, approximately 15 to 30 minutes depending on size. Drain the potatoes thoroughly after cooking.
- Semi-Smash the Potatoes: Transfer the drained potatoes onto a greased baking sheet. Using a potato masher, the bottom of a glass, or a bowl, gently press down on each potato to flatten slightly without breaking it apart.
- Season and Roast: Brush each smashed potato with oil, then sprinkle with chopped thyme, salt, and pepper. Preheat the oven to 450°F (230°C) and place the baking sheet on the top rack. Roast for about 20 minutes or until the potatoes turn golden brown and develop a crispy exterior.
- Prepare the Garlic and Sage Browned Butter: While the potatoes roast, melt the butter in a small pan over medium heat. Continue cooking until the butter begins to turn a light brown color, indicating it is browned and nutty in flavor. Remove from heat and immediately stir in the chopped garlic and sliced or whole sage leaves, allowing the residual heat to infuse the flavors.
- Serve: Once the potatoes are crispy and golden, remove them from the oven and drizzle generously with the garlic and sage browned butter. Serve immediately while hot and enjoy the aromatic and flavorful dish.
Notes
- Use small to medium potatoes for best results as they cook evenly and smash well.
- Adjust seasoning with salt and pepper according to your taste preferences.
- Be careful not to burn the browned butter; remove from heat as soon as it reaches a light brown color.
- For extra crispiness, you may broil the potatoes for 1-2 minutes at the end of roasting but watch closely.
- Fresh sage leaves provide the best flavor, but dried sage can be used in a pinch with less quantity.
