Ingredients
Potatoes
- 4 large russet potatoes (peeled and cut into quarters, about 2 pounds)
- Pinch of kosher salt for boiling
- 1 teaspoon kosher salt (for seasoning)
Seasonings and Butter
- 6 tablespoons unsalted butter
- 1 teaspoon smoked paprika
- ½ teaspoon freshly ground black pepper
- ⅛ teaspoon cayenne pepper
Vegetables
- 1 large onion (diced)
Instructions
- Boil the Potatoes: Peel and quarter the potatoes. Place them in a large pot and cover with cold water, adding a pinch of salt. Cover and bring to a boil over high heat. Once boiling, remove the lid and reduce heat to medium. Cook for 15-20 minutes until potatoes are tender but not falling apart. Drain and set aside.
- Preheat Oven: Set your oven to 500˚F (260˚C) to prepare for crisping the potatoes later.
- Melt Butter: In a 12-inch or larger oven-proof skillet (cast iron or non-stick), melt the butter over medium-high heat until it bubbles subside and it turns a light brown with a nutty aroma.
- Cook Spices: Reduce heat to medium and stir in smoked paprika, kosher salt, black pepper, and cayenne pepper. Cook and stir for 15-20 seconds to bloom the spices.
- Sauté Onions: Add diced onions to the pan, stir to coat with butter and spices, then let them sit for 1 minute. Continue cooking and stirring regularly for about 4 minutes until softened.
- Add Potatoes: Add the boiled potatoes to the pan. Stir well to coat with spices and butter, gently breaking quarters into 1 to 1.5-inch chunks with a spatula. Cook for an additional 4-5 minutes, stirring every minute to prevent burning.
- Crisp in Oven: Stir the mixture one last time, then transfer the skillet to the preheated oven. Bake for about 10 minutes until the potatoes reach your desired crispness.
- Serve: Remove from oven and let rest for a couple of minutes before serving. Enjoy your crispy and flavorful breakfast potatoes!
