Crock Pot Beef Stroganoff is a creamy, savory comfort food classic made effortlessly in a slow cooker. Tender beef stew meat simmers with mushrooms, beef broth, and spices for hours until melt-in-your-mouth tender. The sauce is enriched with sour cream and cream cheese for a luscious finish, served over soft egg noodles and garnished with fresh herbs. This recipe is perfect for a warm, hearty meal with minimal hands-on time.

  • Total Time: 7 hours 10 minutes
  • Yield: 6 servings

Ingredients

Beef and Seasoning

  • 1 ½ lbs Beef Stew Meat, or chopped sirloin
  • 1 ½ teaspoons Italian Seasoning
  • 1/2 teaspoon Garlic Powder
  • 1 ½ teaspoons Kosher Salt
  • 1/2 teaspoon Black Pepper

Sauce and Cooking Liquids

  • 1 ½ Cups Baby Bella Mushrooms, sliced
  • 1 ¾ Cup Beef Broth
  • 1 Tablespoon Dijon Mustard
  • 3 Tablespoons Worcestershire Sauce
  • 6 Tablespoons EZ Gel by Cornaby's, or 1/4 cup cornstarch
  • 2 oz Cream Cheese (optional)
  • 1 Cup Sour Cream

Serving

  • 12 oz Egg Noodles
  • Fresh Thyme, for garnish
  • Fresh Parsley, for garnish

Instructions

  1. Prepare the Slow Cooker and Meat: Lightly grease a slow cooker with nonstick spray. Add the beef stew meat and sprinkle Italian seasoning, garlic powder, kosher salt, and black pepper over the meat. Toss everything together to combine the seasonings evenly with the beef.
  2. Add Mushrooms and Liquids: Add the sliced baby bella mushrooms, beef broth, Dijon mustard, and Worcestershire sauce into the slow cooker with the meat. Cover and cook on low for 7 to 8 hours until the beef is tender.
  3. Thicken the Sauce: About 30 minutes before serving, remove ½ cup of the cooking broth from the slow cooker. Whisk in the EZ Gel or cornstarch until smooth, then slowly pour this mixture back into the slow cooker to thicken the sauce.
  4. Add Cream Cheese and Sour Cream: Stir in the cream cheese and sour cream to the slow cooker until fully combined. Turn the heat to high and cook for another 30 minutes, allowing the sauce to thicken and become creamy.
  5. Cook Egg Noodles: While the stroganoff is finishing, cook the egg noodles according to package instructions. Drain and set aside.
  6. Serve: You can either stir the cooked egg noodles directly into the slow cooker to combine or serve the noodles separately on plates and ladle the beef stroganoff over the top. Garnish with fresh thyme and parsley before serving.

Notes

  • Using EZ Gel or cornstarch helps thicken the sauce without lumps.
  • Cream cheese is optional but adds extra richness and creaminess.
  • For best flavor, use fresh herbs as garnish instead of dried.
  • Adjust seasoning after cooking if necessary, as slow cookers can vary in intensity.
  • You can swap egg noodles for other pasta or mashed potatoes for a gluten-free option.
