This Crunchy Romaine Salad features fresh, crisp vegetables topped with a creamy almond butter dressing infused with lime, tamari, and a hint of sweetness. Quick to prepare, it's a vibrant and nutritious salad perfect for a light meal or side dish.

  • Total Time: 15 minutes
  • Yield: 2 servings

Ingredients

Vegetables

  • 1 cup cucumber and/or zucchini, sliced
  • 1 cup carrot, thinly sliced
  • 1 small red bell pepper, sliced
  • 1 small yellow bell pepper, sliced
  • 1 – 2 scallions, thinly sliced
  • 2 heads romaine lettuce (or leafy greens of choice)
  • Sprinkle of almond slices or pepitas, optional

Dressing

  • 4 tablespoons almond butter
  • 2 – 4 tablespoons water
  • 1 1/2 tablespoons pure maple syrup
  • 1 teaspoon tamari
  • Juice from 1 lime
  • Pinch of red pepper flakes, optional

Instructions

  1. Make the almond dressing: In a small bowl, whisk together almond butter, water, maple syrup, tamari, lime juice, and optional red pepper flakes until the dressing is creamy and smooth. Let it rest for a few minutes to allow the flavors to meld. Taste and adjust by adding more tamari for saltiness or more maple syrup for sweetness if needed.
  2. Prepare the vegetables: Slice the cucumber and/or zucchini, thinly slice the carrots, bell peppers, and scallions as preferred. Use as much or as little as you like to customize your salad. Re-taste the dressing once again before assembling.
  3. Assemble the romaine salad: In individual serving bowls, layer the romaine lettuce as the base. Top with the prepared vegetables arranged to your liking. Drizzle half of the almond dressing over the salad to lightly coat the greens and veggies.
  4. Serve and enjoy: Serve the salad immediately for optimal crunchiness and freshness. Add a sprinkle of almond slices or pepitas if desired for extra texture and nutty flavor.

Notes

  • Use romaine lettuce or any leafy greens of your choice to vary the salad base.
  • Adjust the thickness of the dressing by adding more or less water.
  • Leftover dressing can be stored in the refrigerator for up to 5-6 days.
  • This salad is best served fresh but leftover salad (without dressing) can be stored chilled for up to 1 day to maintain crispness.
  • Optional red pepper flakes add a subtle heat that can be omitted for a milder flavor.
