  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Salad Ingredients

  • 1 can garbanzo beans, rinsed and drained
  • 1 can cannellini beans, rinsed and drained
  • 1/4 cup finely chopped red onion
  • 1 cup chopped English cucumber
  • 1 cup mini mozzarella balls (bocconcini), sliced in half
  • 2 cups cherry tomatoes, halved
  • 2 bell peppers, diced (orange and yellow preferred)
  • 1 cup green olives, halved
  • 1/4 cup sundried tomatoes, sliced thin
  • 2 cans albacore tuna, drained and flaked
  • 1/4 cup chopped fresh parsley

Dressing Ingredients

  • 1 tbsp Dijon mustard
  • 1/3 cup apple cider vinegar
  • 1 tbsp honey
  • 1/3 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the salad base: In a large bowl, combine the garbanzo beans, cannellini beans, finely chopped red onion, chopped cucumber, halved mozzarella balls, halved cherry tomatoes, diced bell peppers, green olives, thinly sliced sun-dried tomatoes, and flaked albacore tuna. Toss all ingredients gently to mix well without breaking the cheese or beans.
  2. Make the dressing: In a small bowl, whisk together the Dijon mustard, apple cider vinegar, honey, and extra virgin olive oil until the mixture becomes slightly thickened and emulsified. Season the dressing with salt and pepper according to your taste.
  3. Toss salad with dressing: Pour the prepared dressing evenly over the salad mixture. Toss the salad carefully to coat all ingredients with the dressing completely. Stir in the chopped fresh parsley for a fresh herbal note.
  4. Chill before serving: Cover the salad bowl with plastic wrap or a lid and refrigerate for 30 minutes to allow flavors to blend and the salad to chill.
  5. Serve: Serve the salad chilled, garnished with extra fresh parsley if desired, as a refreshing and satisfying meal or side dish.

Notes

  • This salad can be made a few hours ahead, making it perfect for meal prepping or entertaining.
  • Use fresh herbs like basil or cilantro as an alternative to parsley for a different flavor profile.
  • Substitute mozzarella balls with feta cheese for a tangier taste.
  • Adjust honey amount based on preferred sweetness level.
  • For a vegan version, omit the tuna and mozzarella and consider adding avocado cubes or roasted chickpeas for protein.
  • The salad can be served on its own or over a bed of mixed greens for extra freshness.
