Ingredients
Main Ingredients
- 3-4 pounds russet potatoes
- 1 tablespoon salt
- ½ teaspoon baking soda
- ½ cup duck fat
- ½ teaspoon seasoning salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion salt
Garnishes
- Fresh oregano
- Fresh parsley
- Fresh sage
- Fresh rosemary
- Parmesan cheese
Instructions
- Preheat the oven: Set your oven to 450°F (232°C) to get it ready for roasting the potatoes.
- Prepare the potatoes: Peel the russet potatoes and cut them into 1½-inch cubes to ensure even cooking and crispiness.
- Parboil the potatoes: Place the potatoes in a large pot with salt and baking soda, then cover with cold water. Bring to a rapid boil over high heat with the lid on. Cook for about 10 minutes or until fork tender. Remove the lid once boiling to avoid boiling over and reduce heat if necessary.
- Drain and rough up: Drain the potatoes and return them to the hot pot off the heat. Leave uncovered to allow excess moisture to steam off. Then cover with the lid and shake vigorously to roughen the edges; this step helps create a crunchy exterior when roasted.
- Heat the duck fat: Place duck fat in a large deep cast iron skillet and put it in the oven for about 5 minutes until it starts to smoke lightly and melts fully.
- Roast the potatoes: Add the potatoes to the hot duck fat, spreading them in a single layer (use two skillets if needed). Return the skillet to the oven and roast undisturbed for 30 minutes.
- Turn and continue roasting: Flip the potatoes over and roast for another 15 minutes. Turn them again and roast an additional 15 minutes until golden and incredibly crispy.
- Season and garnish: When done, remove from oven and sprinkle seasoning salt, black pepper, garlic powder, and onion salt evenly. Garnish with fresh oregano, parsley, sage, rosemary, and parmesan cheese. Serve immediately while hot.
Notes
- Parboiling with baking soda helps break down the potato edges for extra crunch.
- Shaking the potatoes after steaming removes moisture and roughens the surface to aid crisping.
- Using a cast iron skillet ensures even heat distribution for perfect roasting.
- For maximum crispness, avoid overcrowding the skillet; use two if needed for a single layer.
- Garnish with fresh herbs and parmesan adds aromatic flavor and texture contrast.
