Ingredients
Dry Ingredients
- 1 box (16 oz) penne pasta
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Wet Ingredients
- 2 jars (15 oz each) Alfredo sauce
- 3 cups chicken stock or chicken broth
Protein and Vegetables
- 2 cups cooked shredded chicken
- 2 cups chopped fresh broccoli
Topping
- 2 cups shredded Italian blend cheese or shredded mozzarella cheese
Instructions
- Preheat and Prepare: Preheat your oven to 425℉ (220℃). Lightly spray a 9×13 inch ceramic casserole dish with cooking spray to prevent sticking.
- Combine Ingredients: Add the penne pasta, Alfredo sauce, chicken stock, shredded chicken, chopped broccoli, Italian seasoning, garlic powder, kosher salt, and black pepper into the casserole dish. Stir everything well until fully combined and evenly distributed.
- Cover and Bake: Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 35 to 45 minutes depending on your desired pasta texture—35 minutes for al dente, 45 minutes for softer pasta.
- Midway Stir: Halfway through baking, remove the foil and carefully stir the casserole to ensure even cooking. Then re-cover with foil and continue baking.
- Add Cheese and Broil: Once baking is finished, take the casserole out and sprinkle the shredded cheese evenly on top. Place it under the oven broiler for a few minutes just until the cheese melts and becomes lightly golden brown. Watch closely to avoid burning.
- Rest and Serve: Allow the casserole to set for about 5 minutes before serving to let it firm up slightly. Serve warm and enjoy your comforting chicken Alfredo casserole.
Notes
- No need to pre-cook pasta; the liquid ingredients cook it in the oven.
- Using a rotisserie chicken saves time and adds flavor, but you can substitute with any cooked shredded chicken.
- Substitute broccoli with other vegetables like spinach or mushrooms if preferred.
- For a lower fat option, use a light Alfredo sauce and reduced-fat cheese.
- Covering the casserole during baking prevents the dish from drying out.
- Watch closely during broiling as cheese can burn quickly.
