Ingredients
Shrimp Mix
- 1 lb jumbo shrimp (pre-cooked or raw; peeled)
- 1 tsp cooking oil (if needed)
- 1/2 cup finely sliced celery (about 2 small celery sticks)
- 2 green scallions (green and white parts) (diced)
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- zest from 1 lemon
- 1 tbsp lemon juice
- 1/3 cup mayonnaise
- 1 tbsp sriracha sauce (adjust to taste)
- 2 tbsp soy sauce
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp dried garlic powder
- 1/2 tsp dried onion powder
For Serving
- 1 French baguette (sliced)
- 2 tbsp chopped fresh dill (for garnish)
- 2 tbsp chopped fresh chives (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 425°F and prepare a large baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.
- Prepare the Shrimp: If using pre-cooked shrimp, you can skip to the next step. Otherwise, thaw frozen wild-caught shrimp in cold water, peel and remove tails, then pat dry.
- Cook the Shrimp: Heat a large frying pan over medium heat and add a drizzle of cooking oil. Lightly season the shrimp with salt, then fry for 2 to 4 minutes on each side, until the flesh is opaque and no longer translucent. Remove from heat and let cool.
- Chop the Shrimp: Once cooled, finely chop the shrimp into quarter-inch pieces to prepare for mixing with other ingredients.
- Make the Topping: In a large mixing bowl, combine the chopped shrimp, sliced celery, diced scallions, fresh parsley, and fresh dill. Add lemon zest and juice, then mix in mayonnaise, sriracha sauce, and soy sauce. Season with sea salt, black pepper, smoked paprika, garlic powder, and onion powder. Stir gently with a spatula until all ingredients are well incorporated and creamy.
- Assemble Crostini: Thinly slice the baguette on the diagonal to create longer bread slices. Spoon a generous amount of the shrimp topping onto each slice and place them evenly on the prepared baking sheet.
- Bake: Bake the crostini in the preheated oven at 425°F for 12 to 14 minutes, or until the baguette slices turn golden around the edges and the shrimp topping is heated through.
- Serve: Remove the crostini from the oven and allow them to cool for about 10 minutes. Garnish each piece with freshly chopped dill and chives, then add a final squeeze of lemon juice before serving. Enjoy your flavorful shrimp crostini!
Notes
- Pre-cooked shrimp can save time, but fresh shrimp lightly sautéed will add more flavor.
- Adjust the amount of sriracha according to your preferred spice level.
- You can substitute mayonnaise with Greek yogurt for a lighter topping.
- Make sure to slice the baguette thinly for crispiness and easy bites.
- Serve immediately after garnishing for best texture and flavor.
