Ingredients
Meat and Seasonings
- 2 tbsp olive oil, divided
- 1.25 pound sirloin steak (or skirt steak or flank steak)
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper, to taste
Vegetables
- 1 large sweet onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
Instructions
- Heat the skillet: Heat a large cast iron skillet over high heat and add 1 tablespoon of olive oil to coat the surface evenly.
- Season the steak: In a small bowl, combine cumin, chili powder, paprika, and cayenne pepper. Sprinkle this seasoning mix evenly on both sides of the sirloin steak, adding salt and pepper to taste.
- Sear the steak: Place the seasoned steak in the hot skillet. Sear each side for 3-5 minutes until browned and cooked to your preferred doneness (about 3 minutes per side for medium rare). Remove the steak from skillet and set aside to rest on a plate.
- Sauté onions and garlic: Lower the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions and minced garlic, sautéing for 1-2 minutes until onions start to soften and the garlic releases its aroma.
- Cook bell peppers: Add the sliced red and green bell peppers to the skillet and continue sautéing for 2-3 minutes until the peppers reach your desired tenderness. Remove the skillet from heat.
- Slice and combine: Once the steak has rested, slice it thinly or chop into bite-sized pieces. Toss the steak strips together with the sautéed onions and bell peppers to combine flavors before serving.
Notes
- For best flavor and tenderness, let the steak rest after searing to retain juices.
- You can substitute sirloin with skirt or flank steak for variations.
- Serve with warm tortillas, guacamole, salsa, and sour cream for a full fajita experience.
- Adjust cayenne pepper according to your preferred spice level.
- Use a cast iron skillet or a heavy-bottomed pan for best searing results.
