Ingredients
Rice and Liquid
- 1½ cups jasmine rice
- 13.5 ounce can full-fat coconut milk
- 1 cup water (or reduced sodium vegetable broth for more savory flavor)
Flavoring
- 1 tablespoon coconut oil (optional but recommended)
- 1 tablespoon granulated sugar (or to taste)
- 1 teaspoon salt (or to taste)
Optional Garnishes
- Toasted shredded coconut
- Finely minced fresh cilantro or parsley
- Chopped peanuts or cashews
Instructions
- Rinse the Rice: Place the jasmine rice in a colander and rinse under cold running water for 1-2 minutes until the water runs mostly clear. This removes surface starch and ensures fluffy, non-sticky rice. Set aside.
- Heat the Oil: In a large high-sided saucepan over medium-high heat, melt the coconut oil until liquid.
- Coat the Rice: Add the rinsed rice to the saucepan and stir well to coat each grain with the melted coconut oil evenly.
- Add Liquids and Seasoning: Pour in the full-fat coconut milk, water or broth, then add the sugar and salt. Stir to combine all ingredients thoroughly.
- Simmer the Rice: Bring the mixture to a gentle boil, then cover the saucepan with a lid and reduce heat to low. Allow the rice to simmer covered for 15 minutes, cooking until most liquid is absorbed.
- Rest and Fluff: Turn off the heat and keep the lid on for an additional 10 minutes to allow steaming and tenderizing. Remove the lid and fluff the rice gently with a fork to separate the grains.
- Troubleshooting Texture: If the rice is too wet after resting, return to low heat with the lid off and simmer for 1-2 minutes to evaporate excess liquid. If too dry or hard, add a few tablespoons of water or coconut milk, cover, and steam on low heat for about 5 minutes. Adjust liquid and cook time as needed based on your stove and pot.
- Final Adjustments and Serving: Taste the rice and adjust sugar or salt if desired. Garnish with toasted shredded coconut, chopped nuts, or fresh herbs if preferred, then serve warm as an ideal side dish.
Notes
- Use jasmine rice specifically—other rice types may require adjustments in liquid amounts.
- Full-fat coconut milk in a can is preferred for its creaminess and flavor; avoid using coconut cream or cream of coconut as they are too thick and sweet.
- Coconut oil adds extra richness but can be substituted with other oils or unsalted butter.
- To achieve perfect texture, ensure your pot’s lid seals tightly and your stove’s low heat can maintain a gentle simmer.
- If you like a brothier rice texture, add more liquid gradually until desired consistency is reached.
- Rice will continue to absorb moisture during resting, so allow the full resting time before assessing texture.
