Ingredients
Meat and Vegetables
- 1 lb lean ground beef
- 1 onion, chopped
- 1 green bell pepper, roughly diced
- 1 cup corn (1 can, drained)
Canned Goods and Broth
- 10 oz ROTEL tomatoes with green chiles (1 can)
- 15 oz black beans (1 can, drained and rinsed)
- 2 cups beef broth
Grains and Seasonings
- 3 tbsp taco seasoning
- 1 cup jasmine rice, uncooked
Toppings and Garnishes
- 1 cup sharp cheddar cheese, shredded
- Fresh cilantro, chopped
- Pico de gallo
- Sour cream
- Fresh lime
Instructions
- Brown the ground beef and onions: Heat a large skillet over medium-high heat and add the ground beef along with the chopped onions. Cook for 4-5 minutes, stirring occasionally, until the beef is browned and onions are softened. Drain any excess grease from the skillet to reduce fat content.
- Add vegetables, beans, and rice: To the same skillet, add the diced green bell pepper, drained corn, rinsed black beans, ROTEL tomatoes with green chiles, beef broth, taco seasoning, and uncooked jasmine rice. Stir everything thoroughly to combine all ingredients evenly.
- Simmer until rice is tender: Increase heat to high and bring the mixture to a boil. Once boiling, cover the skillet with a lid and reduce heat to low. Let it simmer gently for 20-25 minutes, or until the rice is cooked through and tender, absorbing most of the liquid.
- Melt the cheese: Remove the skillet from heat. Sprinkle the shredded sharp cheddar cheese evenly over the top of the mixture. Cover again and let it sit for 1-2 minutes to allow the cheese to melt fully.
- Garnish and serve: Finally, garnish with fresh chopped cilantro, a spoonful of pico de gallo, a dollop of sour cream, and a squeeze of fresh lime juice to brighten flavors. Serve warm and enjoy this vibrant Mexican-inspired dish!
Notes
- You can substitute ground turkey or chicken for a leaner protein option.
- Adjust the amount of taco seasoning to your taste preference for spice level.
- Using fresh tomatoes and chiles instead of canned ROTEL will change the texture and flavor slightly but works well.
- If you prefer the cheese mixed in more thoroughly, stir it in after melting rather than just sprinkling on top.
- Make sure to rinse the black beans well to reduce sodium content.
- For a gluten-free version, verify that the taco seasoning is gluten-free.
