Ingredients
Pickling Brine
- 1 large red onion
- ¾ cup water
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- ¾ cup apple cider vinegar
Instructions
- Slice the onions: Thinly slice the red onion and place the slices into a jar, pressing down gently to fit as many slices as possible.
- Make the brine: In a small saucepan, combine water, sugar, and salt. Bring to a boil and stir continuously until the sugar dissolves completely, which takes about 1 to 2 minutes.
- Add vinegar and pour: Remove the saucepan from the heat and stir in the apple cider vinegar. Pour this hot mixture over the onions in the jar, making sure the liquid covers all the onions. Use a spoon to press the onions down if necessary to ensure full submersion.
- Rest and refrigerate: Allow the jar to sit uncovered at room temperature for 30 minutes to 1 hour. After resting, either use the pickled onions immediately or cover the jar and refrigerate to use later. They will develop more flavor over time in the fridge.
Notes
- For best flavor, refrigerate the pickled onions for at least an hour before using.
- Use a clean jar with a lid if you plan to store them longer than a day.
- These pickled onions stay good refrigerated for up to 2 weeks.
- You can adjust sugar or salt levels to suit your taste preferences.
- Try adding spices like peppercorns, garlic, or bay leaves for a different flavor profile.
