Ingredients
Shrimp
- 1 pound large raw shrimp (12-15 count ideal, 16-20 count okay, peeled and deveined with tail on)
- 1 tablespoon olive oil
- Salt and pepper to taste
Green Goddess Dip
- 1/2 cup mayonnaise (lite okay)
- 4 scallions (trimmed and roughly chopped, white and green parts)
- 1/2 cup fresh basil leaves (about 12 to 15 large leaves)
- 2 tablespoons lemon juice
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 1/4 teaspoon garlic powder
- 1/2 cup plain Greek yogurt (0% fat preferred; sour cream including lite versions may be substituted)
Instructions
- Prepare the Shrimp: Preheat your oven to 400°F (200°C). Arrange the shrimp on a baking sheet lined with foil for easy cleanup. Drizzle the shrimp with olive oil, then season with salt and pepper. Toss gently with your hands ensuring every shrimp is evenly coated.
- Bake the Shrimp: Place the baking sheet in the oven and bake for 7 to 10 minutes, or until the shrimp turn pink, are firm to the touch, and fully cooked through. Cooking time will depend on the size of your shrimp. Avoid overbaking to keep them tender.
- Make the Green Goddess Dip: While the shrimp bake, combine the mayonnaise, scallions, basil leaves, lemon juice, salt, pepper, and garlic powder into the bowl of a food processor. Blend on high speed for about one minute until smooth and well combined.
- Finish the Dip: Add the Greek yogurt to the food processor and blend again until fully incorporated. Taste the dip and adjust seasoning with additional salt, pepper, garlic, or lemon juice as needed. Transfer the dip to a serving bowl.
- Serve: Serve the roasted shrimp warm with the Green Goddess Dip on the side. The dip can be stored airtight in the refrigerator for up to one week and works great as a veggie dip or salad dressing. Leftover shrimp keep well refrigerated for up to 3 days but are best enjoyed fresh and warm.

- The Green Goddess Dip can be made ahead and stored in the fridge for up to a week.
- Feel free to substitute sour cream for Greek yogurt in the dip if preferred.
- This recipe can easily be doubled to serve more guests or for extra dip to enjoy later.
