Ingredients
Batter
- 1/2 cup Challenge Butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 1 cup milk
Peach Topping
- 4 cups fresh peach slices
- 1 cup granulated sugar
- 1 tablespoon fresh lemon juice
- Ground cinnamon (optional)
For Serving (Optional)
- Ice cream or whipped cream
Instructions
- Preheat Oven: Preheat your oven to 375°F to prepare for baking the cobbler.
- Melt Butter: Place the butter in a 13x9-inch baking dish and put it in the oven until the butter melts completely, about 5 minutes. Remove from oven and set aside.
- Prepare Batter: In a large mixing bowl, combine the flour, 1 cup of sugar, baking powder, and salt. Stir in the milk just until the dry ingredients are moistened. Pour this batter over the melted butter in the baking dish. Do not stir.
- Prepare Peach Mixture: In another large bowl, mix the remaining 1 cup of sugar with the fresh peach slices and lemon juice. Stir well to combine. Pour this peach mixture evenly over the batter in the baking dish. Do not stir. If desired, sprinkle ground cinnamon on top.
- Bake: Bake the cobbler in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.
- Serve: Let the cobbler cool slightly and serve warm or at room temperature, optionally topped with ice cream or whipped cream.
Notes
- Use fresh, ripe peaches for the best flavor and sweetness.
- Do not stir the batter and peach layers once combined to create the traditional cobbler texture.
- Adding cinnamon enhances the peach flavor but is optional.
- For a vegan version, substitute butter and milk with plant-based alternatives.
- Leftovers can be refrigerated and gently reheated before serving.
