Ingredients
Raspberry Simple Syrup
- 16 ounces frozen raspberries
- 1½ cups granulated sugar (300g)
- 1 cup water (240mL)
Raspberry Lemonade
- 2 cups lemon juice (about 10-12 lemons)
- 2 cups raspberry simple syrup (from above)
- 4 cups cold water (960mL)
- 4 cups club soda (960mL)
- 2 lemons (sliced for garnish)
- Ice, as needed
Instructions
- Prepare the raspberry syrup: In a small saucepan, combine frozen raspberries, granulated sugar, and water. Heat the mixture over medium heat until it begins to simmer.
- Simmer the syrup: Continue simmering for 10 minutes, stirring occasionally, until the sugar is fully dissolved and the raspberries have burst, releasing their juices.
- Juice the lemons: While the syrup simmers, wash the lemons thoroughly, then cut them in half. Use a citrus press to extract about 2 cups of lemon juice, collecting it into a liquid measuring cup.
- Cool and strain the syrup: Remove the raspberry syrup from heat and let it cool in the saucepan for about 20 minutes. Strain the syrup through a fine-mesh sieve, pressing the berries to get as much juice as possible. If you prefer a pulpy texture, you can skip straining.
- Mix the lemonade: In a large pitcher, combine the freshly squeezed lemon juice, raspberry simple syrup, cold water, and club soda. Stir gently to blend all the flavors evenly.
- Garnish and serve: Slice the remaining 2 lemons into 8 slices. Add 4 lemon slices to the pitcher for infusion. Serve the lemonade over ice in highball glasses, garnished with the remaining lemon slices and a straw for a refreshing presentation.
Notes
- Adjust the sweetness by adding more or less sugar to the simple syrup according to your taste preference.
- For a stronger raspberry flavor, add some fresh raspberries to the pitcher before serving.
- To keep the lemonade fizzy longer, add club soda last right before serving.
- If you prefer a smoother lemonade, strain the raspberry syrup carefully to remove seeds and pulp.
- This recipe is best served chilled, so refrigeration is recommended if not serving immediately.
